The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. Position Overview
The Restaurant Manager is responsible for overseeing the daily operations of the hotel’s fine dining restaurant. This role ensures exceptional guest experiences through impeccable service standards, refined hospitality, and strong leadership. The manager upholds the hotel's luxury brand values while driving business performance, maximizing revenue, and maintaining a culture of excellence.
Essential Functions
Guest Experience & Service Excellence
- Ensure all guests receive a personalized, memorable fine-dining experience.
- Maintain and enforce 5-star service standards and etiquette.
- Engage with guests regularly, handle special requests, and resolve issues promptly.
- Monitor ambiance, table settings, music, lighting, cleanliness, and restaurant presentation.
Operational Management
- Oversee daily restaurant operations including reservations, seating, service flow, and closing procedures.
- Coordinate with culinary, sommelier, bar, and banquet teams for smooth service delivery.
- Maintain full knowledge of menu items, wine lists, seasonal specials, and chef’s tasting menus.
- Ensure compliance with health, hygiene, and safety regulations.
Team Leadership & Training
- Lead, motivate, and mentor a team of supervisors, servers, hosts, sommeliers, and support staff.
- Conduct daily briefings, performance evaluations, and ongoing skills training.
- Maintain a culture of professionalism, elegance, and anticipatory service.
Financial & Business Management
- Manage budgets, labor costs, and operating expenses in line with hotel goals.
- Analyze daily sales reports and implement measures to increase revenue and profitability.
- Support menu engineering, pricing strategies, and wine list optimization.
- Monitor inventory levels and ensure cost-effective purchasing and storage.
Administration & Coordination
- Handle scheduling, payroll input, employee relations, and disciplinary actions.
- Ensure accurate POS operations, billing, and end-of-day financial reviews.
- Maintain strong communication with hotel departments: kitchen, banquets, sales, events, marketing, and housekeeping.
Other Duties
- Perform any other duties as assigned by the Director of Food and Beverage and Senior Management.
- Maintain a flexible work schedule, including evenings, weekends, and holidays, to meet operational needs.
Qualifications & Experience
- Minimum 3–5 years’ experience managing a fine dining restaurant, preferably in a luxury hotel environment.
- Strong knowledge of upscale service techniques, wine programs, and modern gastronomy.
- Excellent leadership, communication, and guest-relations skills.
- Proficiency with reservation systems (e.g., OpenTable), POS systems, and MS Office.
- Diploma or degree in Hospitality Management or a related field preferred.
- Food Manager Certification
- Professional certifications such as WSET or Court of Master Sommeliers are an advantage.
