The Role
We're seeking a skilled Chef de Partie to run within our kitchen brigade. You'll be responsible for the full execution of your station during service, maintaining the technical precision and consistency our guests expect at this level.
What You'll Do
- Own and execute your station independently through mise en place, prep, and full service
- Execute dishes to exact plating, portioning, and seasoning specifications
- Maintain rigorous knife work, technique, and ingredient handling standards
- Coordinate timing with adjacent stations to ensure seamless service
- Uphold sanitation, temperature control, and food safety protocols at all times
- Participate in daily tastings, menu refinement, and seasonal menu development
- Manage station-level inventory, ordering needs, and waste control
What You Bring
- 2 years of experience in a fine dining or upscale kitchen environment
- Formal culinary training and/or equivalent hands-on experience in Japanese cuisine strongly preferred
- Deep respect for technique — knife skills, knife care, precision cutting
- Experience with traditional Japanese methods a strong plus
- Ability to work with composure and consistency during high-pressure service
- Strong understanding of food safety and HACCP standards
- Flexibility to work evenings, weekends, and holidays
Nice to Have
- Experience in an omakase, kaiseki, or Michelin-recognized kitchen
