Summary:
The Executive Chef is responsible for overseeing of the day-to-day operations in the kitchen. The Executive Chef coordinates, plans, implements, monitors, directs, and evaluates all aspects of the kitchen, including the supervision, support and coaching of employees.
Requirements:
- High school or GED
- Degree or any certification in culinary, dietetics, food management, or related field.
- Minimum of 2 years in a substance abuse, mental health, or healthcare setting.(REQUIRED)
- Must have ServSafe Food Safety certification.
- CPR - Prior to start date - A Must
- Must pass Level II background check
Responsibilities:
- Oversees food quality assurances and controls in food production by using guidelines for sanitation and safe food handling as outlined by the local health department.
- Ensures menu and food offerings are approved by dietitian. Ensures the development of a four-week cycle menu.
- Ensures food is served that complies with any dietary orders or restrictions.
- Maintains a file of approved menus, therapeutic diets, and diet restriction protocols.
- Responsible for purchasing, managing, storing, and overseeing all aspects of food supply.
- Develops, manages, and supervises food & nutrition budget and expenditures.
- Responsible for ordering food and kitchen supplies and other related products.
- Develops, manages, and supervises contracts with vendors and suppliers.
- Creates kitchen department schedules. Develops an effective staffing plan that ensures adequate staff coverage.
- Ensures food & nutrition services is operated in a manner that meets all Federal, State, County, City, health department and any other licensing and regulatory agency.
- Ensures permits obtained and posted as required.
- Ensures food and nutrition services process are operated in a manner that meets and exceeds all infection control guidelines including, but not limited to, hand washing, cleanliness, and hand washing signs.
- Ensures food is managed and stored in a manner that meets all temperature requirements.
- Ensures all refrigerators and freezers have thermometers as required and maintains temperature logs.
- Develops, monitors, and supervisor regular kitchen cleaning and disinfection and completes regular cleaning of all vent hoods.
- Work together with Dietitian to ensure all meals have correct diet for clients.
- Assist with any additional tasks as requested by management.
