POSITION SUMMARY: The primary purpose of your job position is to assist the Dietitian in the provision of food service and nutritional programs in accordance with current federal, state, and local standards, guidelines, and regulations governing our facility, and as may be directed by the Dietician, the Dietary Supervisor or Administrator, to assure that quality nutritional services are provided on a daily basis and that the dietary department is maintained in a clean, safe, and sanitary manner.

- Adheres to and assures compliance with Code of Conduct, facility policies and procedures and all applicable rules, regulations and standards as promulgated by Federal, State, and accrediting agencies or regulating bodies. This includes, but is not limited to, Department of Health, Centers of Medicare and Medicaid Services, and other applicable regulatory agencies.
- Observe patient food intake and report progress and dietary problems to dietician.
- Prepares a major meal, following recipes and determining group food quantities.
- Analyze menus and recipes, standardize recipes and test new products.
- Supervise food production and service, or assist dietitians and nutritionists in food service supervision and planning.
- Obtain and evaluate dietary histories of individuals to plan nutritional programs.
- Plan menus and diets or guide individuals and families in food selection, preparation, and menu planning, based upon nutritional needs and established guidelines.
- Determine food and beverage costs and assist in implementing cost control procedures.
- Provide the Dietitian with assistance researching food, nutrition and food service systems.
- Deliver speeches on diet, nutrition and health to promote healthy eating habits and illness prevention and treatment.
- Perform administrative duties such as completing necessary forms, reports, evaluations, studies, etc., to assure control of equipment and supplies.
- Make written and oral reports/recommendations to the Dietitian and/or Administrator as necessary/required concerning the operation of the Dietary Department.
- Participate in facility surveys (inspections) made by authorized government agencies.
- Interview residents or family members, as necessary, to obtain diet history.
- Participate in maintaining records of the resident's food likes and dislikes.
- Assist in developing methods of determining quality and quantity of food served.
- Ensure that charted dietary progress notes are informative and descriptive of the services provided and of the resident's response to the service.
- Ensure the menus are maintained and filed in accordance with established policies and procedures.
- Visit residents periodically to evaluate the quality of meals served, likes and dislikes, etc.
- Involve the resident/family in planning objectives and goals for the resident.
- Assist in planning regular and special diet menus as prescribed by the attending physician.
- Assist in developing diet plans for individual residents.
- Review therapeutic and regular diet plans and menus to assure they are in compliance with the physician's orders.
- Review the dietary requirements of each resident admitted to the facility, as may be required, and assist the attending physician in planning for the resident's prescribed diet plan.
- Meet with administration, medical and nursing staff, as well as other related departments in planning food service programs and activities.
- Performs other duties as may be needed or assigned.

Education and/or Experience:
- Must possess, as a minimum, a high school diploma.
- Must complete a minimum of an associate’s degree program from a school that is accredited by ACEND
- Must have training in cost control, food management, diet therapy, etc.
Certificates and Licenses:
- Must provide evidence of being free of tuberculosis infection upon hire and as set forth by the policies of the facility.

- Must be able to read, write, speak and understand the English language.
- Must possess the ability to make independent decision when circumstances warrant such action.
- Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel, and the general public.
- Must be knowledgeable of nursing and medical practices and procedures, as well as laws, regulations, and guidelines that pertain to long-term care.
- Must possess leadership and supervisory ability and the willingness to work harmoniously with and supervise other personnel.
- Must have patience, tact, a cheerful disposition and enthusiasm, as well as the willingness to handle difficult residents.
WORK ENVIRONMENT:
- Works in office area(s) as well as throughout the facility’s dietary service areas (i.e. dining rooms, resident rooms, activity rooms, etc.)
- Moves intermittently during working hours.
- Is subject to frequent interruptions.
- Interacts with residents, personnel, visitors, government agencies/personnel, etc., under all conditions and circumstances.
- Is subject to hostile and emotionally upset residents, family members, personnel, and visitors.
- Communicates with the medical staff, activities personnel, and other department supervisors.
- Works beyond normal working hours and on weekends and holidays when necessary. May be on call 24 hours per day, 7 days per week.
- Is subject to call-back during emergency conditions (e.g., severe weather, evacuation, post-disaster, etc.).
- Is subject to injury from falls, burns from equipment, odors, etc., as well as to reactions from dust, disinfectants, tobacco smoke, and other air contaminants.
- Is subject to exposure to infectious waste, diseases, conditions, etc., including TB and the AIDS and Hepatitis B viruses.
- May be subject to the handling of and exposure to hazardous chemicals.
PHYSICAL AND SENSORY REQUIREMENTS (with or without the aid of mechanical devices):
- Must be able to move intermittently throughout the work day.
- Must be able to cope with the mental emotional and stress of the position.
- Must possess sight/hearing senses or use prosthetics that will enable these senses to function adequately so that the requirements of this position can be fully met.
- Must function independently, have flexibility, personal integrity, and the ability to work effectively.
- Must meet the general health requirements set forth by the policies of this facility which may include a medical and physical examination.
- Must be able to relate to and work with ill, disabled, elderly, emotionally upset, and, at times, hostile people within the facility.
- Must be able to lift up to 25 pounds. Frequent carrying of dietary supplies. Requires frequent pushing and pulling of carts.
- May be necessary to assist in the evacuation of residents during emergency situations.
