Job Responsibilities
This position is an integral part of the bakery production team working to maximize the effectiveness, compliance, and day to day production function of the bakery. The role will have a primary responsibility of mixing doughs and batters and operating the Rademaker continuous sheeter line, pulling Kettle Dough for production and the setup of the next day production of Croissants. The dough mixer/Rademaker Operator will perform the necessary activities related to the timely manufacture of the finished goods.
Principle Accountabilities
- Communicate effectively with all bakery plant associate, leads, supervisor and management.
- Possess a positive mindset through your words, actions and appearance.
- Keep up with fast paced production in a timely manner.
- Able to operate all mixing equipment, Rademaker sheeter line, proofers, V-Mag, and Empire depositors, filler depositors, and speed icers in a safe manner.
- Track, record, and log proper weights of donut shells produced.
- Ensure accurate counts of raw donuts produced.
- Able to properly read and follow recipe batch sheets and system generated work order requirements.
- Able to lift materials and ingredients used to make dough up to 50 lbs.
- Able to cut and block dough into 10 to 30 lb. dough chunks and feed sheeter incline conveyor.
- Able to empty mixers of dough of up to 300 lbs. and dump onto dough table and move dough to sheeter line, empty 140 quart bowls or dough or batter.
- Ensure that all HACCP and CCP guidelines as established by QA are followed.
- Record ingredients, seed dough, yeast, water, cinnamon, dough temperatures as required per the batch sheets. Follow batching process as outlined and ensure uninterrupted supply of raw dough to the sheeter line for a continuous production flow. Follow all batter recipe for quality and consistency. Document all Lots and lot changes for daily production.
- Ensure all production and sanitation areas are maintained, organized, and clean at all times. Daily cleaning of all mixers, Rademaker sheeter line, and production pieces used.
- Return and put away all ingredient materials to their assigned area in the proper assigned designated locations.
- Be able and willing to perform any/all job duties within the production and finished product picking operation. Be knowledgeable in all areas of product quality, adhere to SOP’s and follow all quality and HACCP standards.
- Ensure the proper set up and operational readiness of all production equipment, including mixers, sheeter, proofer, fryer, and need to start up operations on time.
- Attended and participate in F2F meetings with associates and management.
- Support and help resolve Quality problems as communicated from QA.
- Ensure that mixing and sheeter line equipment is clean and sanitized prior to use.
- Adhere to all employee GMP adherence policies and procedures.
- Perform any and all other reasonable job duties as assigned by management.
