Job Summary: This position is part of our Culinary Innovation Hub Grab-n-Go team, which produces a lineup of our most popular signature salads, homemade Ready-to-Heat entrees, signature Neapolitan Take-n-Bake pizzas, and our award-winning tiramisu dessert. These items are available in grocery stores around the Puget Sound. The Food Production Prep position is responsible for preparing all of the ingredients that will be used by the assembly team in the creation of final packaged products. This includes washing, inspecting, cutting, and staging cooked and uncooked ingredients to meeting daily production needs.

Supervisory Responsibilities: None

Essential Job Duties:

• Wash, dry, and inspect produce and other ingredients in accordance with safe food handling requirements once trained and evaluated.
• Cut, dice and mince ingredients following safe professional knife-handling procedures to meet size and quality specifications once trained and evaluated.
• Safely work around boiling water and steam to prepare ingredients including pasta and blanched vegetables at production scale once trained and evaluated.
• Safely work with production scale ovens to prepare ingredients including roasted vegetables and croutons once trained and evaluated.
• Hand-bake artisanal pizza skins at production scale once trained and successfully evaluated.
• Use industrial-scale kitchen tools and appliances including automated can openers and cheese graters following safe operating procedures.
• Contribute to the completion of the daily prep list as part of the Prep Team.
• Understand and follow recipe and ingredient specifications.
• Must be able to work while standing for periods of up to 3 hours without sitting.

Additional Duties:

• Maintain a safe and clean work environment.
• Perform and assist with general housekeeping tasks including sweeping, mopping, and wiping down work surfaces.
• Arrive for each scheduled shift on time and ready to work with proper food safety and safety equipment.
• Report any barriers to completing the daily prep list to a supervisor or manager (e.g. missing tools, insufficient ingredients, improper temperature control)
• Contribute to a working environment where everyone is valued and respected.
• Remain coachable and eager to improve and grow.
• Support the work of other teams to ensure that production can be completed on schedule.

Required Experience, Certifications and Education:

• Maintain a current Food Handler’s Permit valid in King County.
• Complete and maintain all required safety training as provided by Tutta Bella in accordance with FDA and USDA requirements.
• Learn and apply safe handling procedures for all equipment and appliances used in the completion of daily work through training provided by Tutta Bella.

Physical Demands:

• Must be able to work while standing for up to 3 hours.
• Must be able to lift up to 40 pounds regularly without strain.
• Must be able to lift up to 60 pounds occasionally.

Work Environment: When assigned to cold prep, this position regularly works in cold temperatures between 40°F and 35°F. When assigned to hot prep, this position is regularly exposed to temperatures at or above 80°F. All work must be performed wearing required safety and food safety equipment including lab coats, hairnets, and slip-resistant shoes, in addition to any approved equipment for adapting to working conditions.

Travel Requirement: This position is on-site only. No additional travel is required.

Additional Eligibility Requirements:

• Must be fluent and literate in English or Spanish.
• Must be at least 18 years of age.
• Must be eligible for employment in the United States of America (USA).
