Starting Salary: $130,000.00 yearly

Turning Stone Enterprises is seeking an accomplishedExecutive Chef
to lead the strategic vision and daily operations of our multi-outlet culinary program, including restaurants, catering, banquets, and commissary services. This role will drive innovative menu development, uphold the highest standards of food quality and safety, and ensure operational excellence through strong leadership, team development, and effective cost management. The ideal candidate is a proven culinary professional with extensive high-volume resort or casino experience, exceptional creativity, and a passion for delivering outstanding guest experiences.

What you will do as an Executive Chef:

• Effectively directs the strategic menu development, planning, design, coordination and organizational phases of all food production for restaurant, catering and commissary operations.
• Effectively communicates with department heads in the food services, banquets, beverage and related support and operating departments.
• Oversees menu planning, in-house marketing, and food related promotions supporting the casino.
• Ensures food quality& food safety measures are executed while maintaining food costs at targeted levels.
• Maintains systems& procedures for ordering, receiving storage, preparation& service of food.
• Oversees department selection, hiring, training, standards& procedures, evaluating, and scheduling processes.
• Continually evaluates and documents the performance of all culinary positions.
• Oversees annual operating and capital budgeting process including day to day forecasting of revenue, labor, and operating costs. Uses P as a tool to maintain proper costs and revenue levels.
• Effectively handles Guest recovery and employee issues with appropriate documentation and follow up.
• Continually evaluates equipment, stock levels, labor,& business volume forecasting taking appropriate actions to ensure all areas are prepared and in working order.
• Ensures the Culinary Management team is properly trained& developed. Establishes presentation techniques& quality standards.
• Demonstrates a comprehensive knowledge of products offered including food recipes, prices, presentation, internal control procedures and all company as well as department policies.
• Ensures all operations follow safety and health guidelines in accordance with Oneida Nation public health& sanitation regulations.
• Continually researches and develops new concepts; collaborates on future development projects.

Work Experience

Key attributes we're seeking as an Executive Chef are:

• Bachelor’s degree in Hotel& Restaurant Management or accredited Culinary School preferred.
• Must have 7-10 years experience in high volume, Multi Outlet Food& Beverage Operations including catering& banquet facilities in a large integrated resort environment or equivalent.
• Demonstrates the ability to communicate effectively with guests, employees and management in both written and verbal form.
• Must be proficient in computer applications Microsoft Word, Excel, and MS Outlook.
• Must have a working knowledge of all equipment, maintenance, cleaning and operation of various kitchen equipment.
• Working knowledge of Infogenesis POS System, Red Rock, UKG, Virtual Roster payroll and scheduling system.
• Must be certified in a NY State approved alcohol awareness course.
• Must be able to obtain/renew all required licenses or certifications, specifically the Tribal Gaming License.
• Must be SerSafe Certified.
• Ability to stand/walk for long periods of time and lift up to100

pounds.
