We are currently searching for a hospitality-and operations-driven Culinary Operations Director for Graze Food Hall by Travail, located in the North Loop neighborhood of Minneapolis.
Ideal candidates have 3 years of Culinary Operations/ Exec Chef/ Exec. Sous Chef experience, with prior catering operational experience.
Ability to speak Spanish is required.
Candidates must be at least 18 years old.

Desired Skills and Experience

Main Responsibilities
In this role, you will lead in organizing and managing the prep systems and output for all Graze Food Hall by Travail food stalls. You will also lead and develop your prep teams, assist in developing cooks and chefs’ cooking skills, ensure food quality meets Travail Collective Standards, will manage financial health by ensuring food costs goals are met and food costing is correct, work with vendors and purveyors to secure best pricing, and collaborate with Owners and multiple Travail Collective departments internal business partners and managers to ensure the offered menus meet company initiatives and quality, budget goals and are executable by our prep and service teams.
- Meeting with owners and internal business partners for menu concepting and execution plans, providing input to concept/ menu ideas as it pertains to business goals
- Planning, organizing, controlling and directing the work of the prep teams of listed locations, and assisting with training service teams as needed
- Holding team and self accountable to work expectations and priorities
- Establish production priorities via the prep lists and pars and assist in assigning job duties for service teams
- Maintain inventory control and usage, are responsible for all ordering
- Input weekly invoices into invoice report for accounting
- Report and manage monthly inventories for COG accountability
- Assist & develop cooks/ chefs’ proper cooking skills, accountability, work ethic, positive attitude and sense of urgency
- Maintain walk-in standards, store inventory in designated areas, and define standards and SOPS
- Follow health code and food label standards
- Cook finished food products to correct temperature, ensure quality of product, and complete in a timely manner, as needed
- Supervise, coach and mentor kitchen staff during prep hours and service hours as needed
- Hold team member one-on-ones for coaching and development, and assist management teams in doing so
- Responsible for documentation of any employee issues/ concerns, and partnering with HR as needed
- Exhibit exceptional hospitality
- Attend all necessary team and leadership meetings and training opportunities
- Work with the leadership team to motivate/elevate staff as a unit
- Partner with Travail Collective business partners to ensure the needs of the restaurants are met and addressed
