Job Summary
The Sushi Cook prepares a variety of sushi rolls in a timely manner while maintaining exceptional product quality and a high level of guest service throughout the shift.
Essential Duties & Responsibilities
Prepare a variety of sushi rolls accurately and efficiently during service.
Provide friendly, professional customer service and assist guests with questions and special requests.
Assume 100% responsibility for the quality and consistency of all products served.
Follow all standard portion sizes, preparation methods, quality standards, and kitchen policies and procedures.
Stock and maintain adequate product levels at the sushi bar to ensure smooth service.
Portion food products according to standard recipes and specifications.
Maintain a clean, organized, and sanitary workstation, including bar stations, shelves, broilers, fryers, freezers, sauté burners, convection ovens, flat top ranges, and refrigeration equipment.
Assist with kitchen duties as needed, including fish preparation, portioning, frying, dishwashing, cooking rice, and sautéing.
Follow proper roll presentation and garnish standards.
Properly handle, store, label, and rotate all food products.
Assist with food preparation during off-peak periods.
Follow the closing checklist for the sushi bar and assist with kitchen closing procedures.
Attend all scheduled employee meetings and contribute ideas for improvement.
Perform additional duties as assigned by the Kitchen Manager, Lead Line Cook, or Sous Chef.
Qualifications & Requirements
Minimum of 1 year of experience working in a sushi restaurant.
Ability to communicate clearly with managers, kitchen staff, and dining room personnel.
Ability to reach, bend, stoop, and frequently lift up to 70 pounds.
Ability to stand and work on your feet for extended periods (up to 10–12 hours).
Ability to work in a hot and humid kitchen environment.
Ability to follow instructions and support multiple kitchen tasks as needed.
Availability to work evenings, weekends, and scheduled shifts.
Demonstrated dexterity in using kitchen equipment and utensils and safely carrying hot or heavy trays.
Valid food handler certification as required by local and state regulations.
Must report to work in full uniform every shift (chef coat, apron, hat or bandana, and non-slip shoes).
