Position Overview
The Butcher is responsible for cutting, trimming, grinding, and preparing meats to company standards while delivering exceptional service at the front counter. This position requires attention to detail, strong knife skills, product knowledge, and a team-oriented mindset.
Key Responsibilities
Meat Cutting & Preparation
Break down primal and subprimal cuts of beef, pork, and poultry
- Cut steaks, roasts, chops, and custom portions to customer specifications
- Grind beef, pork, chicken, and custom blends
- Prepare and stuff sausages
- Trim, tie, and prepare specialty cuts (filets, ribeyes, roasts, etc.)
- Maintain proper rotation and inventory control
Food Safety & Cleanliness
Maintain strict sanitation and food safety standards
- Properly clean and maintain cutting equipment, grinders, slicers, and knives
- Follow all health department and company procedures
- Keep prep areas and display cases clean and organized
Customer Service
-Work the front counter assisting customers with product selection
- Answer questions about cuts, cooking methods, and preparation
- Take custom orders and special requests
- Provide recommendations based on customer needs
- Help maintain an inviting, professional shop atmosphere
General Shop Duties
-Stock and rotate display cases
- Assist with take-and-bake items and specialty products
- Help receive and properly store deliveries
- Support team members during busy periods
- Contribute ideas for sausage flavors, specials, and promotions
Qualifications
Previous butcher or meat cutting experience preferred
- Strong knife skills and knowledge of meat fabrication
- Ability to lift 50 lbs
- Comfortable standing for extended periods
- Strong attention to detail
- Team player with a positive attitude
- Passion for quality food and customer service
