What are the responsibilities and job description for the Full Service General Manager position at Tinsley Family Concessions?
Objective:
The General Manager of Bourbon Academy leads all daily operations of our full-service restaurant. This role is the face of the Bourbon Academy brand — responsible for delivering an authentic, elevated bourbon hospitality experience that reflects Kentucky’s rich distilling heritage while meeting the standards of Tinsley Family Concessions. The GM oversees all aspects of the operation including guest experience, team leadership, revenue performance, compliance, bourbon programming, and concession guidelines.
Essential Functions:
- Operational Oversight: Monitor restaurant operations, including food quality, customer service, employee performance, inventory, and cash handling. Ensure compliance with brand guidelines, food safety, and health standards.
- Quality Assurance: Conduct walk-throughs to observe and ensure all areas of the restaurant meet company standards.
- Documentation & Review: Review logs and documentation to assess operational quality and consistency.
- Staff Management: Conduct performance evaluations, provide feedback, and assign tasks to non-management staff.
- Training & Development: Oversee training for non-management and hourly supervisor employees, supporting their growth and development.
- Scheduling & Staffing: Generate and adjust staff schedules based on restaurant needs.
- Vendor & Ordering Coordination: Manage food and supply orders and maintain vendor relations to meet inventory requirements.
- Customer Interaction: Address and resolve customer complaints professionally, ensuring a positive dining experience.
- Communication: Engage with employees, customers, vendors, and management to ensure smooth operations and resolve issues as needed.
- Reporting & Documentation: Maintain detailed records, including manager logs, employee files, and reports on restaurant performance.
- Versatility: Step in as needed to perform duties such as food service, cooking, and food running.
Qualifications:
- Minimum 3–5 years of restaurant or hospitality management experience, preferably in a full-service or upscale casual environment.
- Demonstrated knowledge of Kentucky bourbon, American whiskey, or premium spirits; ability to train others on tasting room protocols.
- Strong financial acumen: P&L management, labor scheduling, inventory control, and budget accountability.
- ServSafe, or equivalent responsible alcohol service and food safety certifications (or ability to obtain within 60 days of hire).
- Ability to obtain and maintain a SIDA (Security Identification Display Area) badge as required by the Louisville Regional Airport Authority.
- Excellent interpersonal, communication, and conflict-resolution skills.
- Proficiency with POS systems, scheduling software, Microsoft Office / Google Suite, and inventory platforms.

Tinsley Family Concessions, Inc. operates concession restaurants, including coffee shops, bar and grill restaurants, pizza restaurants, and sandwich restaurants.
The Company provides food services in Muhammad Ali – Louisville Airport, as well as Miami and Tampa International Airports as a Joint Venture partner with HMSHost Corporation.
We jointly operate 30 concessions at the Miami International Airport including Starbucks, Burger King, Pizza Hut, etc.
