The Role
As a bread baker, you'll be at the center of what we do — mixing, shaping, proofing, and baking the sourdoughs and scratch-recipe loaves our neighbors come back for week after week. You'll work with live starters, scale recipes, manage oven timing, and help keep the bench running clean and steady through early-morning production. This is hands-on craft work, early hours, and real pride in the daily bake.
What You'll Do
- Mix, shape, proof, and bake a range of breads — sourdough, country loaves, baguettes, and seasonal specials — to Thorough Bread standards
- Maintain and feed sourdough starters; manage fermentation timing and dough schedules
- Scale recipes accurately and build prep lists for daily production
- Operate and maintain bakery equipment safely — mixers, deck and convection ovens, proofers, retarders, dividers, and related tools
- Keep the bench, ovens, and production areas clean, organized, and food-safe throughout your shift
- Work closely with the pastry and counter teams to keep the case full, fresh, and beautiful through the day
- Support opening production, dough prep, and end-of-day clean-up as scheduled
What We're Looking For
- A genuine interest in learning the craft of bread baking — experience is preferred but not required; we'll train the right person
- Reliable, on time, and ready for early-morning starts
- A team player who communicates well and supports the bench through busy production days
- Detail-oriented with a clean, organized work style
- Able to stand for extended periods and lift up to 50 pounds
- Patient and curious — willing to respect dough, fermentation, and the rhythm of a real bake
If you've baked in a production setting before, great. If you're new to it but hungry to learn and willing to show up consistently, that matters just as much.

- Hours: Full time 30–35 per week, including weekends. Part time: 10-20 hours per week.
- Store hours: Wednesday - Saturday 7:00 am-2:00 p.m., Sundays 8:00 am-12:00 p.m.
