Position Summary
The Thermal Process Specialist is responsible for the development, validation, documentation, and ongoing verification of thermal processing systems to ensure food safety, regulatory compliance, and optimal manufacturing performance. This role supports retort and thermal processing operations through scientific validation, data analysis, and process optimization.
Working within the Operations team, Thermal Process Specialist ensures that all thermal processes achieve required lethality targets and maintain commercial sterility while supporting efficient production. The role collaborates closely with Quality, Engineering, and Production to ensure safe and compliant operations across all thermal processing systems.
Key Responsibilities
Thermal Process Development & Validation
- Develop and validate thermal processes for retort and other thermal processing systems.
- Conduct heat penetration and temperature distribution studies to validate product safety and process performance.
- Develop and document scheduled thermal processes for new and existing products.
- Identify and control critical factors impacting product safety including formulation, packaging format, fill weight, viscosity, and container geometry.
- Translating validation results into clear manufacturing instructions and process specifications.
Thermal Processing Testing
- Plan and execute:
- Temperature distribution testing
- Heat penetration studies
- Process lethality verification
- Analyze and interpret test data to ensure processes meet microbial safety targets.
- Prepare technical reports documenting study design, results, and conclusions.
Process Calculations & Lethality Verification
- Perform thermal process calculations using established methods such as:
- General Method
- Ball Method
- Numerical modeling
- Calculate and validate F₀ values and lethality targets to ensure commercial sterility.
- Evaluate thermal process performance against microbiological safety requirements.
Regulatory Compliance & Documentation
- Maintain compliance with:
- FDA low-acid canned food (LACF) regulations
- Food safety standards and industry guidelines
- Thermal processing regulatory requirements
- Ensure proper documentation of:
- Scheduled processes
- Validation reports
- Retort operating procedures
- Support regulatory filings and documentation as required.
Thermal Process Specifications
- Develop and maintain thermal processing specifications used by manufacturing.
- Translate thermal process requirements into:
- HACCP critical control points
- Manufacturing instructions
- Process control limits
- Ensure production teams operate within validated parameters.
Deviation Investigation
- Review production records to identify thermal process deviations.
- Evaluate deviations against scheduled process requirements.
- Perform risk assessments to determine product disposition.
- Support root cause analysis and corrective actions.
Instrumentation & Equipment Oversight
- Verify accuracy and calibration of thermal processing instruments including:
- Temperature sensors
- Pressure gauges
- Recording devices
- Ensure instrumentation meets regulatory calibration tolerances.
- Work with engineers to maintain and improve thermal processing systems.
Control Systems Support
- Support configuration and validation of retort control systems.
- Review and assist in development of thermal processing recipes.
- Validate control system functionality to ensure compliance with scheduled processes.
Thermal Process Auditing
- Participate in internal thermal process audits.
- Review documentation, equipment functionality, and operator compliance.
- Support continuous improvement of thermal processing programs.
Cross-Functional Collaboration
- Work closely with:

- Provide technical expertise for process troubleshooting and production improvements.
Qualifications
Education
- Bachelor’s degree in Food Science, Food Engineering, Chemical Engineering, Microbiology, or related scientific discipline
Required Training
- Better Process Control School (BPCS) certification or equivalent thermal processing training
Experience
- 3–7 years of experience in:
- Retort or thermal processing environments
- Shelf-stable food manufacturing
- Thermal validation or process authority support
