Essential Job Functions
- Communicate with F&B Director, Executive Chef and Sous Chefs to order all F&B products according to hotel needs and specifications.
- Forecast operational needs and schedule deliveries of food and beverage items.
- When necessary deliver paper products, food, and beverage to necessary departments.
- Monitor the grades and quality of products received to ensure they meet the hotel's established standards.
- Determine the food and beverage requirements for catering menus, and order according to guarantee of the menus.
- Obtain bids from vendors, using the telephone and FAX machines, according to the specifications set by the department heads.
- Ensure appropriate levels of inventories are maintained to minimize waste and maximize ratio turnover.
- Participate in hotel meetings including weekly staff, F&B, and daily menu meeting.
- Follow sustainability guidelines and practices related to HHM’s EarthView program.
- Practice safe work habits, wear protective safety equipment and follow MSDS and OSHA standards.
- Perform other duties as requested by management.
- High School diploma required.
- Previous purchasing/inventory experience or equivalent training preferred.
- Work schedule varies and may include working on holidays and weekends.
- Requires standing for extended periods, walking, pushing, lifting up to 25 pounds, bending and reaching, stooping, kneeling, or crouching.
