Position Summary
The Dietary Supervisor is responsible for overseeing the daily operations of food service in a healthcare, senior living, or institutional setting. This role ensures the delivery of nutritious meals that meet dietary requirements and health standards, while maintaining compliance with food safety regulations and internal policies.
Key Responsibilities
Supervision and Leadership
Oversee dietary staff including cooks, dietary aides, and dishwashers.
Train, schedule, and evaluate team members to ensure efficiency and high standards of service.
Conduct daily briefings and supervise meal preparation and service.
Meal Planning and Nutrition
Coordinate with dietitians to develop menus that meet nutritional standards and cater to patients’ dietary needs (e.g., diabetic, low-sodium, allergen-free).
Monitor portion sizes and food presentation.
Ensure resident/patient dietary preferences and restrictions are followed.
Compliance and Sanitation
Maintain compliance with local, state, and federal food safety and sanitation regulations (e.g., HACCP, FDA, state health codes).
Perform routine kitchen inspections to ensure cleanliness and proper food handling procedures.
Maintain accurate records for inventory, inspections, and corrective actions.
Inventory and Budgeting
Order food and supplies while controlling costs and minimizing waste.
Track usage and forecast needs in coordination with the food service manager or facility administrator.
Assist in budget preparation and monitor department spending.
Customer Service
Respond to resident/patient concerns or complaints regarding meals.
Promote a pleasant dining experience and foster positive relationships with staff and residents.
Qualifications
Education
High school diploma or GED required.
Associate’s degree in nutrition, food service management, hospitality, or a related field preferred.
Certified Dietary Manager (CDM) or Food Protection Manager Certification (e.g., ServSafe) is often required or preferred.
Experience
Minimum of 2–3 years in food service, with at least 1 year in a supervisory or management role.
Experience in a healthcare or long-term care environment is highly desirable.
Skills and Competencies
Knowledge of special diets and therapeutic nutrition.
Strong leadership and team-building skills.
Excellent communication and interpersonal abilities.
Detail-oriented with strong organizational and time management skills.
Proficiency in inventory and menu planning software is a plus.
Working Conditions
Fast-paced kitchen and dining environment.
Standing for long periods; ability to lift up to 25–50 lbs.
May include weekends, holidays, and shift rotations depending on facility needs.
