About the Job:

The Nutrition Group has an open position of Kitchen Manager for School Food Service. This position entails overseeing food production and staff training at a large K-12 School Cafeteria Operation.

Duties to Include:

• Food Preparation on a large production scale

• Meeting Company’s Expectations
• Understand Company’s Food Concepts
• Daily Production Records and Paperwork
• Facilitate the execution of catered events as needed
• Work with regional chefs to develop and implement recipes

Culinary Manager (CM) (Non-Union Position)

Manager who rotates between schools to provide operational support and staff training.

Reports To

The CM reports directly to the Director of Food and Nutrition (DFN) and coordinates all scheduling with the DFN.

Job Overview

The CM is responsible for traveling between schools to provide operational coverage and support across all Interboro locations, including special functions. The CM is expected to complete all required training and coursework and maintain a full understanding of NSLP requirements.
 They support kitchen teams through hands-on training, cooking, and daily operational tasks. Additional responsibilities include monitoring inventory levels, reinforcing recipe compliance, reviewing supplier invoices, recommending cost-saving measures while maintaining TNG standards. The CM also assists with catering for school-related events, including prep work, cooking, setup, service, and breakdown.

Responsibilities and Duties

Operational Support

• Work side-by-side with the kitchen manager, or staff to ensure recipes are followed and production records are completed accurately.
• Complete HACCP logs throughout the shift, verify temperature controls, and train staff in proper food safety procedures.
• TNG expectations include appropriate menu options, clean and neat service lines and appealing food choices.
• Report equipment issues in a timely manner.
   
• Assist kitchen operations when short-staffed.

Leadership & Compliance

• Enforce The Nutrition Group and District policies and procedures, including cell phone restrictions, uniform standards, break compliance, and theft prevention.
• Lead staff across all positions as needed (cashier, server, porter, sanitation, end-of-day close-out, paperwork).
• Delegate tasks to ensure breakfast and lunch service lines are properly set, stocked, and presented according to TNG standards.
• Perform mock health and sanitation inspections to ensure compliance with all guidelines.

Administrative Tasks

• Review rosters and POS reports; assist with deposits and end-of-day reconciliation.
• Place food orders, count and enter inventory, and support the kitchen manager with organization and stock management.
• Assist with USDA, NOI, and DoD product ordering, inventory, and usage tracking.
• Maintain working knowledge of NutriSlice, PrimeroEdge, and The Nutrition Group’s software, forms, and acronyms.
• Complete monthly inventory with accurate item numbers, descriptions, and quantities.

Training & Communication

• Provide ongoing feedback, coaching, and performance-related communication to staff and the DFN.
• Reinforce training across all kitchen roles and help onboard new employees as needed.
• Hold or obtain ServeSafe certification within 90 days of hire.
