JOB RESPONSIBILITIES:
- Responsible for supporting the VP of Food and Beverage in all aspects of food beverage quality, cost control, and completing inventories.
- Respond to all inquiries regarding the financial performance of the food and beverage department.
- Monitor and ensure that food and beverage operating procedures are met on a consistent basis.
- Communicate effectively with front of house management and staff.
- Oversees the flow of beverage service on the gaming floor and at all property bars.
- Provides day to day leadership direction to the Assistant Food and Beverage Managers and FOH team.
- Demonstrate the ability to perform the duties of all restaurants, bars and service wells.
- Monitor and control FOH labor within the department.
- Maintain adequate coverage in all outlets based on business demands.
- Responsible for hiring, training, evaluation, and corrective counseling of FOH food and beverage team members.
- Ensures all team members follow recipes, measurements, quantities, and other information so each item served can be duplicated consistently.
- Ensure all prep items are made to approved standards.
- Confirms that all opening and closing checklists are adhered to and product(s) stored and secured.
- Inspects serving areas to ensure observance of safe, sanitary handling practices.
- Make certain all product(s) is placed and restocked in designated areas.
- Maintain a solid knowledge of all food and beverage products and ensure all products are properly rotated.
- Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time.
- Inspects all restaurants, bars and service areas to ensure all products are properly labeled and dated to ensure safekeeping and sanitation.
- Ensures all food and beverage team members are using all cleaning equipment, chemicals, and sanitizing products in accordance with all MSDS sheets and departmental standards.
EDUCATION AND EXPERIENCE:
- Minimum 5 years previous management experience in both beverage and food service preferred.
- High school diploma or its equivalent.
- Must be 21 years of age or older.
- Must pass all required pre-screening and background checks.
- Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.
- Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
- Must be able to obtain and maintain a valid Kentucky gaming/racing license.
