As an Expo for THBY you have a unique position within our restaurant that teams you up equally with our Back-of-House and Front-of-House teams. You are a direct line of communication between the service staff and the chef, and vice versa. As an expo you will assist the chef team with anything it needs to better execute the service of our food—restocking plates on the line, keeping a clean and tidy workspace, enlisting food runners when needed, etc. An expo is responsible for the timely and descriptive presentation of our menu items. The expo serves our warm bread and ricotta to each table as well as busses and re-sets tables in a timely fashion following guest departure. A LEAD EXPO is primarily responsible for the management of all tickets generated in the kitchen. A RUNNER EXPO is primarily responsible for bread service and the timely bussing and resetting of tables following guest departure. Responsibilities:
- Maintain professional atmosphere in all guest areas.
- Proper grooming and appearance standards, as stated in the employee manual are
- expected at all times
- Treat all colleagues with care and respect and always be nice, warm, friendly, caring and helpful.
- Maintain a full stock of to-go boxes, flatware, cups, and bags.
- Understand position points and table numbers based on posted floorplan.
- Responsible for thorough knowledge of all menus including allergy concerns.
- Ensure the quality and consistency of all plates leaving the kitchen.
- Communicate changes in dining room, order changes, re-fires and other details directly to the chef.
- Communicate extended fire times, delayed tables, and other kitchen challenges directly to manager-on-duty.
- Deliver food to guests based on orders to the kitchen. You MUST prioritize hot food.
- Enlist the help of others to ensure rapid delivery of all food coming from the kitchen.
- Food is to be served from the left with an open palm to the guest and placed correctly before the diner; plates are cleared from the right.
- Responsible for assisting service staff with clearing plates, glass & silver from guests.
- Responsible for cleaning of each table following guest departure and timely re-set to prevent seating delays.
- Keep managers and chefs informed of guest complaints, challenges and successes.
- You are expected to complete all assigned sidework prior to departure.
Qualifications:
- At least 18 years old or older
- Able to stand for long periods of time
- Strong sense of urgency and proficient at multitasking
- 1 years of restaurant experience preferred; not required
- Ability to fluently read, write and speak English
