Garde Manger - Blue Box Café by Daniel Boulud - Costa Mesa

The Blue Box Café is seeking a detail-oriented and passionate Garde Manger to join our culinary team. This role is essential to delivering an exceptional guest experience through the precise preparation and presentation of high-quality dishes in a fast-paced, fine dining setting.

Key Responsibilities:

• Prepare, assemble, and finish a variety of hot and cold menu items with consistency, precision, and attention to detail
• Execute dishes according to established recipes, plating standards, and service timelines
• Maintain a thorough understanding of all menu items, ingredients, and preparation methods
• Assist with receiving and properly storing deliveries, ensuring all products meet quality standards
• Rotate stock and manage station inventory to minimize waste and ensure freshness
• Uphold the highest standards of cleanliness, organization, and food safety in accordance with Health Department regulations and Dinex Group standards
• Accurately follow recipes, including measurements and basic culinary math, to ensure consistency and cost control
• Work collaboratively with the kitchen team, maintaining clear and professional communication during prep and service
• Support overall kitchen operations as needed, demonstrating flexibility and a team-first mindset

Qualifications:

• Culinary school graduate or minimum of 1 year of experience in a professional kitchen, preferably in a high-volume or fine dining environment
• Foundational knowledge of kitchen operations, food safety, and service flow
• Strong work ethic with a willingness to learn, grow, and take direction
• Ability to multitask and maintain composure in a fast-paced environment
• High standards for cleanliness, organization, and attention to detail
• A culinary degree is preferred but not required.

Physical Requirements

• Ability to stand for long periods of time
• Ability to lift up to 50 lbs
