What are the responsibilities and job description for the Chef for Women's Residential position at The Addictions Care Center of Albany, Inc.?
Primary Purpose:
Prepare meals and forecast portion specifications for all meals served to Residential clients; ensure compliance with food storage, sanitation, and hygiene practices.
Duties and Responsibilities:
1. Prepare meals according to the menu and forecast portion specifications for all meals served to Residential clients; ensure compliance within established dietary budget; implement appropriate action to eliminate budget variances.
2. Plan and prepare food to ensure prompt and efficient preparation to meet the menu requirements; ensure food production quality standards are met and amounts are sufficient to meet expected need.
3. Ensures daily cleanliness of kitchen, pantries, equipment, food storage cabinets, floors, and any other food preparation areas or equipment.
4. Determine food and supply needs for residence; maintain inventory control of food and supplies.
5. Coordinates with maintenance services and food service manager of food preparation facility, equipment and furniture as needed.
6. Make substitutions and changes to menu if warranted by situation.
7. Ensure food quality and that food is attractively presented.
8. Be aware of resident’s food allergy requirements and/ or religious needs and adjust as needed.
9. Maintain and administer standards for food production and handling, cooking, housekeeping, sanitation, safety, dress, security, and client and employee hygiene in compliance with appropriate laws and regulations and policies and procedures.
10. Keep program staff and clients abreast of changes and standards, orient new personnel and clients in food handling and food storage procedures.
11. May be asked to work a flexible schedule to maintain required meal preparation schedule.
12. Assists Reintegration new residents through the maintenance of an emergency food pantry to ensure they have food when they move into program.
Licenses, Certificates, or Registrations: Valid New York State driver license.
Education Requirements: Candidate must have either a degree in food service or related field or an equivalent combination of relevant education and/or work experience. High School Diploma is a must.
Experience / Knowledge Requirements: Candidate must have a minimum of three (3) years’ experience in food service. Knowledge of menu planning, food preparation, ordering, portioning, food storage, sanitation and hygiene practices.
