Job Summary
Summary: Responsible for setting up and maintaining food production and quality control of all food items prepared in all areas of the kitchen and operation in university Dining Hall. Oversee that assigned job expectations are completed while policy and procedure are maintained. Contribute to the team efforts and show good customer interactions, and professionalism for customers, fellow employees, and all others with whom there is contact with. Coordinates the activities of the other food service employees within the facility. Creates an enjoyable experience for the customers, staff, and visitors in accordance with applicable federal, state, and local standards. Supports unit Management.
Essential Duties and Responsibilities:
- Responsible for preparing all food items necessary for the assigned area.
- Assigns in detail, specific duties to all employees under supervision for efficient operation of the kitchen.
- Checks for proper storage and handling of products used including portion, presentation, and recipe controls.
- Maintains cleanliness and professionalism of all kitchen areas including food and non-food working areas.
- Reports any equipment repair/maintenance to appropriate supervisor or facility department.
- Advise management of purchasing requirements with a focus on minimizing waste and avoiding product shortages.
- Utilizes approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.
- Operates and cleans equipment per department procedures after each use.
- Stores, labels and dates all food items according to policy. Maintains established food rotations in storage in order to minimize spoilage and waste.
- Follows HACCP guidelines to ensure quality and safety of food supply.
- Operates food services equipment in a safe manner and according to established policies and procedures.
- Assists in serving meals, remaining present during scheduled meal periods to receive customer comments and feedback.
- Ensures high quality, good-tasting, and well-presented food and beverages are served within established time frames.
- Takes inventory of supplies and equipment, maintains stock at required operational level.
- Oversees accuracy of timekeeping, and compliance with OSHA, and Health Dept. regulations.
- Monitors staff daily to ensure all systems, protocols, and quality assurance tools are utilized correctly.
- Enforces safety standards with employees. Places maintenance requests for malfunctioning equipment and removes it from use. Reports safety problems to the management team.
- Ensures sanitation standards are enforced daily and signs off on cleaning procedures.
- Responsible for providing training and corrective action, for current and newly hired team members.
- Prepare production reports for management and ensure their unit meets the expectations for quality, productivity, and safety.
- Monitors and completes all HACCP logs.
- Provide quality customer service to customers by providing one on one attention to detail.
- Oversees and participates in the preparation and service of food and beverage items in adherence to company food standards for presentation, sanitation, and safety (meeting HACCP and OSHA guidelines) and portion control.
- Responds to customer complaints in person at the time of the complaint.
- Trains employees in methods of performing duties and assigns and coordinates work of employees to promote the efficiency of operation and excellence in food and service.
- Assists in the orientation of employees and oversees the training of staff in areas of responsibility.
- Performs other duties as assigned.
Qualifications
Education and Experience: High school diploma or general education degree (GED); or two to three years related experience and/or training; or equivalent combination of education and experience.
Language Skills: Ability to read and comprehend simple instructions, short correspondence, and memos; to write simple correspondence; to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals; Ability to compute rate, ratio, and percent.
Reasoning Ability: Ability to apply common sense understanding to carry out detailed but uninvolved written, or oral instructions; ability to deal with problems involving a few concrete variables in standardized situations.
Other Qualifications: Food Handlers Card; ServSafe training and certificate as required by applicable state and county.
Physical Demands:
While performing the duties of this job, the employee is regularly required to stand, talk or hear, and taste or smell. The employee frequently is required to walk; use hands to finger, handle, or feel; and reach with hands and arms. The employee must regularly lift and/or move up to 10 pounds and frequently lift and/or move up to 25 pounds.
Work Environment:
While performing the duties of this job, the employee is occasionally exposed to wet and/or humid conditions; moving mechanical parts; fumes or airborne particles; toxic or caustic chemicals; extreme cold; extreme heat; risk of electrical shock and risk of radiation. The noise level in the work environment is usually loud.
