Sweet Carocas is a rapidly growing manufacturer of premium refrigerated and frozen desserts based in Miami. We are looking for an experienced Pastry Chef with a strong background in high-volume production and food manufacturing to lead our pastry operations.

What You'll Do
- Lead the daily production of refrigerated and frozen dessert lines.
- Prepare, scale, and execute pastry recipes with consistent quality and yields.
- Standardize recipes, batch sheets, and production procedures.
- Oversee mixing, baking, assembly, filling, portioning, and packaging.
- Supervise and train a small production team (2 employees).
- Ensure compliance with FDA, DOA, GMP, and HACCP food safety standards.
- Maintain cleanliness, sanitation, and organization throughout production.
- Monitor ingredient usage, production yields, and waste reduction.
- Collaborate on process improvements to increase efficiency and consistency.
What We're Looking For
- 2 years of experience as a Pastry Chef or Senior Pastry Cook in a production, commissary, or food manufacturing environment.
- Experience with high-volume dessert production (manufacturing experience preferred).
- Strong knowledge of pastry techniques, scaling, batching, and recipe execution.
- Understanding of FDA, GMP, and HACCP food safety regulations.
- Strong leadership, communication, and organizational skills.
- Detail-oriented, reliable, and motivated to grow with a fast-paced company.
Compensation & Benefits
- Base Salary: $60,000 annually
- Performance Bonus: Up to $12,000 annually
- Total Compensation: Up to $72,000 per year
- Opportunities for career growth into Production Management or R&D as the company continues to expand.
