Company Overview
The Baker’s role is to produce freshly made, artisan pastries, breads and other baked items, such as laminated croissants, pies and desserts, daily using the best possible ingredients for customers to enjoy the best possible eating experience. The Swamp Early Morning Bread Baker is the one responsible for the Greenville famous Swamp Stecca.
Duties
- Produces Swamp baked goods including: baking, mixing, scaling, portioning recipes and following proper weight standards
- Follows daily checklists to prepare and bake a variety of unique baked goods
- Mixes, rolls, and proofs dough using industry standard equipment
- Follows proper time and temperature guidelines to ensure a quality bake each time
- Sorts, assembles, and packs pastries for cafe use, store sales, or catering and wholesale orders
- Puts the final touches on baked goods to be packaged and put out for retail sales
- Works safely around hot ovens, heavy equipment, and sharp utensils
- Masters oven use and baking to perfection
- Knows Stecca yields and works towards keeping yield high and waste low
- Produces beautifully proofed, cut and baked loaves of Stecca
- Knows how to execute all recipes and procedures with efficiency and accuracy
- Maintains a clean and sanitary workspace; washes dishes as needed
- Takes direction from all members of the Kitchen Management team
- Assists fellow employees as needed
Job Requirements
- Must be 18 years of age or older
- Must be available for a variety of early morning shifts such as 3:00 am- 11:00 am
- Three years previous baking and/or mass production required
- Must wear closed-toe, slip resistant shoes with a Coefficient of Friction rating between 0.54 and 0.76. Coefficient of Friction rating is the measure of traction for slip resistant shoes and generally shoes labeled for commercial kitchen use fall into this category (examples of brands include but are not limited to Tredsafe, SafeTStep, Skechers for Work).
- Must be comfortable with repetitive motions
- Must be able to work in an often hot or cold environment
- Must have a high energy level, be self motivated, and a natural troubleshooter
- Must communicate by Paylocity, Slack, and email
- Adheres to all SCDHEC food safety requirements including following rules of cooling, time control of temperature and storing food properly
- Is an active part of the Swamp Team so adheres to high standards of service, quality, and presentation
- Takes initiative to help any area of the business if possible
Pay and Benefits
- Pay starts at $17.50/hour
- Wage increase available if exceeding requirements
