Position Summary:
The Sushi Chef is an artist and a craftsman, responsible for creating exceptional sushi and sashimi. Key Responsibilities:
Sushi Preparation & Craftsmanship:
- Prepare and serve a full range of sushi, sashimi, nigiri, and maki rolls with expert precision and artistry.
- Master the art of sushi rice preparation (shari), ensuring the texture, temperature, and flavor are consistently perfect.
- Demonstrate advanced knife skills for filleting, slicing, and preparing various types of fish.
- Create beautiful and visually appealing platters that highlight the freshness and quality of the ingredients.
- Maintain the highest standards of food quality and presentation at all times.
- Innovate and develop new, creative sushi rolls and specials that reflect both tradition and modern tastes.
Food & Inventory Management:
- Inspect and select the freshest, highest-quality fish and other ingredients from suppliers.
- Manage and maintain a clean, organized, and well-stocked sushi bar.
- Monitor and rotate inventory to ensure freshness and minimize waste.
- Adhere to all food safety and sanitation regulations with the utmost diligence.
- Report any equipment or ingredient issues to management promptly.
Guest Interaction & Service:
- Engage with guests seated at the sushi bar, answering questions about the menu, ingredients, and preparations.
- Provide recommendations and explain the details of the day's specials.
- Create a welcoming and educational experience for guests.
- Accommodate guest requests and dietary restrictions with care and professionalism.
Team Collaboration:
- Work efficiently and collaboratively with other chefs, kitchen staff, and front-of-house team members.
- Assist in training new team members on sushi preparation techniques and standards.
- Maintain a positive and respectful attitude in a high-pressure kitchen environment.
Required Skills & Qualifications:
- Proven experience as a Sushi Chef or in a similar role in a high-volume, quality-focused Japanese restaurant.
- Extensive knowledge of Japanese culinary traditions and techniques.
- Expertise in handling and preparing a wide variety of seafood.
- Advanced knife skills and a deep understanding of food safety.
- A keen eye for detail and a passion for creating beautiful food.
