Supermoon Bakehouse is New York City's most imaginative bakery — a bakehouse, café, and gelataria rolled into one storefront at 120 Rivington Street, open every day, where croissants, cruffins, donuts, eclairs, soft serve, and gelato are treated like edible art. We've built a devoted following and a recognizable brand around inventive, beautifully made pastry and a store experience that feels like a world of pure imagination. Beyond the counter, we run an active wholesale program serving a select roster of NYC cafés, hotels, restaurants, and offices, plus shipping, catering, and corporate gifting. And we're just getting started: we're opening a second location at Chelsea Market, which means real, ground-floor opportunity for growth within the company for the right leader.

About the Role

The General Manager runs the whole show. Reporting directly to the Owner, you are accountable for every part of the business: the retail store, front of house, back of house production, wholesale, shipping and fulfillment, and the P&L that ties it all together. You translate the founders' vision into well-run shifts and a healthy, profitable business — making sure every croissant, every guest, and every package leaves the bakehouse at peak quality.


This is a hands-on leadership role for someone who is highly organized, calm under pressure, and equally comfortable reading a P&L, coaching a team, jumping on the line during a rush, and chasing down a late wholesale delivery. You own the day-to-day so the brand can keep doing what it does best.

Key ResponsibilitiesWhole-Business Leadership
  • Own the day-to-day operation of the entire bakehouse — store, FOH, BOH, wholesale, and shipping — as a single, coordinated business
  • Translate the Owner's vision and goals into clear standards, SOPs, and execution across every department
  • Be the central point of accountability: when something needs to get fixed, decided, or improved, it runs through you
  • Set the tone and culture, modeling the energy, hospitality, and standards you expect from the team
Retail Store & Guest Experience (FOH)
  • Lead from the floor: work several FOH shifts each week, staying close to the guest experience and the team rather than running the business from an office
  • Lead the front-of-house team to deliver fast, warm, genuine hospitality that turns first-time visitors into regulars
  • Define, communicate, and uphold service and presentation standards throughout every shift
  • Keep the store sharp, clean, well-merchandised, and on-brand from open to close
  • Manage the guest experience across in-store, delivery platforms (DoorDash, Uber Eats), catering, and special orders
  • Handle guest inquiries, feedback, and recovery gracefully, empowering the team to do the same
  • Keep the team trained on a constantly rotating menu so they can sell and explain it with confidence
Production & Kitchen (BOH)
  • Partner with the culinary/production team to ensure product quality, consistency, and availability across all channels
  • Coordinate production planning so the store, wholesale, and fulfillment demands are all met without over- or under-producing
  • Oversee food cost, waste, yield, and inventory in the kitchen against budget targets
  • Ensure prep, par levels, and daily counts support a smooth, sold-through day
  • Uphold quality control standards so what goes out the door always represents the brand
Wholesale
  • Own the wholesale program end-to-end: onboarding, order management, production coordination, delivery, billing, and account relationships
  • Vet and manage a select roster of high-quality wholesale clients (cafés, hotels, restaurants, offices)
  • Ensure wholesale orders are accurate, on time, and at the same quality bar as retail
  • Identify opportunities to grow wholesale revenue responsibly without straining production
  • Be the main point of contact and problem-solver for wholesale partners
Shipping & Fulfillment
  • Oversee shipping, e-commerce, and online order fulfillment so packages go out accurately, on schedule, and in great condition
  • Manage packaging, logistics, carriers, and fulfillment workflows to protect product quality in transit
  • Coordinate catering, corporate gifting, and special-order fulfillment alongside daily operations
  • Monitor fulfillment costs, damages, and turnaround, and continuously tighten the process
Customer Communications & Orders
  • Own the customer inbox: respond promptly and on-brand to email inquiries, inbound messages, and DMs from guests, large-group/event leads, and prospective wholesale and catering clients
  • Manage online, phone, catering, corporate gifting, and special orders from request through to fulfillment
  • Coordinate deliveries and pickups across all channels so every order is accurate, on time, and to standard
  • Track inquiries and orders so nothing slips through the cracks, and turn inbound interest into booked business
People & Team
  • Hire, train, schedule, and lead a dependable, high-performance team across FOH, BOH, wholesale, and shipping
  • Build and maintain training programs covering product, service, food safety, and standards
  • Provide continuous, constructive feedback and coaching, and develop people for growth
  • Execute fair, consistent, progressive discipline when needed
  • Build FOH and production schedules that match labor to business levels and hit labor targets
Financial Ownership & Performance (P&L)
  • Run a healthy, profitable business — you are ultimately accountable for hitting profitability targets across every channel
  • Own the P&L with full accountability for revenue, labor, cost of goods, and overall profitability
  • Drive revenue growth across retail, wholesale, shipping, catering, and gifting
  • Monitor and manage labor and food cost weekly, adjusting proactively to business levels
  • Manage ordering, inventory, vendor relationships, and invoicing
  • Build and maintain budgets and forecasts in partnership with the Owner, and review periodic results together
  • Find new revenue and efficiency opportunities without compromising brand integrity
Growth & Expansion
  • Help us grow: actively expand the business across retail, wholesale, shipping, catering, and gifting, and help bring new locations (starting with Chelsea Market) online
  • Carry clear KPIs tied to growth — revenue, guest count, wholesale accounts, average order value, and expansion milestones — and own the results against them
  • Use data and instinct to spot opportunities, test ideas, and continuously improve the business
  • This is a build-and-grow mandate, not a caretaker role — we want a leader who moves the numbers
Compliance, Safety & Sanitation
  • Keep Supermoon compliant with all local, state, and federal employment and operating laws
  • Lead the team to full Health Department compliance and an 'A' letter grade on every inspection
  • Maintain food safety, sanitation, and workplace safety standards across store, kitchen, and fulfillment areas
  • Ensure responsible practices and proper handling across all areas of the operation
Communication
  • Keep the Owner informed with clear, regular updates on operations, performance, wins, and issues
  • Communicate daily priorities, news, and standards to the team, and surface their needs and successes
  • Run effective shift, management, and all-staff meetings to keep everyone aligned and improving

Qualifications
  • Prior experience as a General Manager (or equivalent top-of-house leader) running a hospitality or food business — this is not a role for a first-time GM
  • 5 years of management experience in a bakery, café, restaurant, or food production/hospitality business, including time owning the whole operation; multi-channel (retail wholesale/production) experience strongly preferred
  • Demonstrated track record of growing a business and hitting KPIs — someone who has done this before is essential
  • Strong financial acumen with hands-on P&L, labor, and food-cost management experience

  • Knowledge of or genuine passion for high-quality baked goods and pastry is a big plus
  • Education: Bachelor's degree or hospitality-related certification preferred, or equivalent experience earned on the job
Physical Requirements

Involves standing for most of the shift, climbing stairs repeatedly, bending, stooping, and frequent reaching with arms and hands while handling objects under 20 lbs. May include lifting and moving objects of 20 lbs or more.

Schedule & Status
  • Status: Full-time, salaried, on-site
  • Hours: 50–60 per week, including some nights, weekends, and holidays based on business needs
  • Location: 120 Rivington Street, New York, NY (flagship), with a second location opening at Chelsea Market and clear runway to oversee multiple sites as we grow
