Summary

The Dietary Manager plans, organizes, supervises, and directs all administrative and operational activities of the Food and Nutrition Services Department. This role ensures safe and timely preparation of meals and nutritional services in accordance with residents’ needs, preferences, and care plans. Success in this position is measured by quality food service, compliance with all regulatory standards, and effective departmental leadership. The Dietary Manager plays a key role in enhancing resident satisfaction and maintaining a clean, safe, and welcoming dining environment.

Responsibilities

  • Oversee all aspects of food service operations, including purchasing, budgeting, meal preparation, service, and storage.
  • Monitor and ensure compliance with all sanitation, safety, and infection control standards.
  • Plan menus to meet residents’ dietary needs, therapeutic diets, and preferences in collaboration with the Registered Dietitian.
  • Supervise dietary staff, including recruiting, training, scheduling, coaching, and performance management.
  • Maintain updated diet cards, process new diet orders, and ensure accurate dietary documentation.
  • Participate in interdisciplinary team meetings and QAPI activities.
  • Inspect prepared meals for quality, temperature, presentation, and timeliness.
  • Manage food and supply inventory; track usage, waste, and cost-effectiveness.
  • Ensure safe receiving, storage, preparation, and serving of food.
  • Maintain kitchen equipment and prepare cleaning schedules to ensure food safety.
  • Support the Registered Dietitian as needed in nutritional assessments and care planning.
  • Promote and protect residents’ rights, dignity, and well-being.
  • Participate in emergency drills and be available for on-call support as needed.
  • Additional duties as assigned.

Education and Experience

  • Associate’s degree or higher in Food Service Management, Hospitality, or related field preferred.
  • Minimum of two (2) years’ experience in food service management; healthcare food service experience preferred.
  • Must meet all state requirements for food service or dietary managers.

Knowledge, Skills and Abilities

  • Knowledge of food service operations, nutrition, and therapeutic diets.
  • Strong leadership and team management skills.
  • Ability to plan, organize, and manage budgets effectively.
  • Effective verbal and written communication skills.
  • Strong problem-solving and decision-making abilities.
  • Proficiency in basic computer applications.
  • Knowledge of regulatory compliance standards for food service in healthcare.
  • Ability to work collaboratively across disciplines.
  • Patience, tact, and the ability to work with diverse populations.

Work Environment / Physical Demands

This position operates in a healthcare facility kitchen environment, with exposure to heat, cold, steam, and cleaning chemicals. The role requires prolonged standing, walking, bending, and occasional lifting of up to 50 pounds. Employees may be exposed to infectious materials, food allergens, and varying temperatures. Must be able to work flexible hours, including weekends and holidays, and respond to emergency situations.
