Core Responsibilities:
SANITATION
• Wash and replace bar glassware, remove and breakdown bus buckets, trays, racks, carts, recyclables, bar equipment and tools throughout shift at all beverage service outlets.
• Cleans work areas throughout shift, including coolers, garbage’s, empty containers, and bottles.
• Sweeps, mops, and stores cleaning equipment for beverage outlets at closing or before leaving.
• Cleaning and breakdown of bar dishwashers, beverage dispensers and equipment at beverage outlets
• Complete daily cleaning of bar tops, stools, ledges, shelving, product displays and counters
• Cleaning and breakdown of all beverage outlet equipment, drink machines, food display units
OPERATIONS
• Ensures that all beer, wine, liquor, non-alcoholic beverages, paper goods, and misc. bar items are consistently stocked throughout shift at the proper par levels as directed by management
• Utilizes and completes requisition sheets, follows internal product transfer procedures, and communicates on hand inventory.
• Delivery and preparation of bar foods, snack items and condiments and materials for beverage outlets and workstations
• Daily preparation of garnishes, mixes, syrups, specialty items and bulk mixes for all beverage outlets
• Stocking, delivery, and breakdown of F&B promotional displays, special event materials and beverage stations at bars, lobbies, workstations, meeting areas, patios, and casino floor.
• Utilizes back of house beverage workstations to prepare alcoholic beverages for cocktail associates.
• Stocks and maintains beverage vending machine products and beverage self-service areas
• Assists in receiving, storing, and rotation of beer, wine, liquor, non-alcoholic beverage products, soda bibs, beverage outlet snack items, and materials. Maintains cleanliness and organization of all beverage storage areas and coolers
• Utilizes hand trucks or carts when necessary to transfer and replace any needed supplies, equipment, kegs, food, or beverage items between storage areas and bar, cocktail, and beverage outlets.
• Cleans and organizes workstation coolers, shelving, racks and cabinets, food and beverage displays.
SAFETY
• Strictly adheres to all health department safety protocols for food, beverage, and chemical handling.
• Must report any potential guest safety or alcohol service hazards to an appropriate member of the management immediately. Utilizes wet floor signs and safety equipment urgently and correctly.
• Stock and maintain paper towels, soap, sanitizer, and chemical dispensers for bars, cocktail service, and beverage stations.
SERVICE
• Must Role Model Company guest service program and maintain professional interactions with guests and co-workers.
• Must be certified in the approved, on-premises responsible alcohol service program.
• Communicates with management before punching out or going on breaks
• Manages time and tasks efficiently, remains active and available for management and associates
TOOLS & EQUIPMENT:
• Dish machine, mops, brooms, buckets, cleaning supplies, chafing dishes, hot boxes, rolling carts, power washers, wet/dry vacuums, compactor, scales, hand truck, pallet jack and computer.
WORK ENVIRONMENT:
• Under variable temperature conditions, indoor / outdoor work as needed.
• Under variable noise levels
• Around chemicals, fumes and or odor hazards
PHYSICAL REQUIREMENTS:
• Ability to stand for long stretches of time, bend, stretch, twist, or reach with your body and arms
• Medium work - Exerting up to 80 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects
• Ability to work long hours, some back-to-back shifts as needed
• Ability to work under variable temperatures and noise levels
• Near Vision – ability to see details at close range

QUALIFICATIONS / REQUIREMENTS:
• High school diploma or equivalency degree preferred.
• Must be able to obtain a New York State Gaming License.
OTHER:
• Weekends, Holidays, overnight and swing shifts may be required, and scheduled shifts may vary based on operational needs. Reports to work on time and prepared for work.
• Approach all encounters with guests and employees in a friendly, service-oriented manner.
• Maintain high standards of personal appearance and grooming, reports to work in a clean uniform and worn as defined in the SHM handbook when working.
• Responds consistently and urgently to radio requests by associates and management.
• Adheres to SHM handbook policies, standards, and personal conduct standards.
