SHIFT:
· Monday – Friday (occasional Saturdays)
· 6AM-Finish (usually between 3PM-5PM)
WAGE:
· based on culinary experience
TASKS PERFORMED:
· Take over the ownership of the kitchen.
· Coordinate with managers, team leaders, and kitchen staff to plan, organize, and set up daily production.
· Develop, implement, and maintain quality assurance protocols
· Maintain timely and accurate records for all kitchen operations
· Follow HACCP plans and execute CCPs
· Ability to constantly follow recipes accurately and without any deviations.
· Measures ingredients and prepares them in accordance with established recipes
· Make roux to be used in various sauces
· Prepares large kettles of sauces, reductions, roasted garlic, caramelized onions… to be used for manufacturing needs.
· Responsible for inspecting and recognizing defective product and make appropriate adjustments
· Ability to train new and existing staff
· Observe FIFO with raw materials
· Observe and follow allergen policy
· Ability to work and cooperate with USDA inspector
· Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
· Undertake basic cooking duties such as reducing sauces, parboiling food etc.
· Cook raw materials to be used in our food products
· Maintain Production and Quality reports accurate and completed on a timely manner.
· Follows defrosting, decanting, prep, kettle, bagging roasting and filling procedures, process control limits, start-up and change over procedures, line capabilities, product specifications, raw material tracking, operators responsibilities, quality checks and instructions for line shut down if product is compromised in any way.
· Properly separates food-waste, and trash and places them in their designated barrels. Places food-waste in yellow barrels, and trash in gray barrels. The yellow food-waste barrels are stored in back hallway for Organic collection, gray trash barrels are emptied into trash dumpster. Place cardboard only inside of the corrugated dumpster.
SKILLS AND EXPERIENCE NECESSARY TO PERFORM JOB TASKS:
· Proven commercial kitchen experience
· 2 years experience as a supervisor in the food manufacturing industry.
· Sound knowledge of food health and safety regulations
· The ability to work under pressure
· Excellent organizational skills
· Effective communication skills
· The ability to stand for extended periods
· Able to follow instructions and work as part of a team
· Food manufacturing experience a plus
· Previous cooking or batch making experience is a plus
· Familiarity with applicable USDA and FDA regulations as they apply to sanitation and employee practices.
· Ability to lift 25-50 pounds
