FLORIDA STATE HOSPITAL IS A TOBACCO FREE FACILITY.
- Prepares all salads for lunch and evening tray line, pre-portion and plate. Prepares, measures and mixes ingredients in proper amounts following standardized recipes for assigned bakery items, including modified diets. Prepares items and amounts on production sheets unless changed by the Food Service Administrator. Designates portion size of finished products or score items such as sheet cakes. Portions or counts items to prevent waste. Assures proper serving size, garnish and tray appeal. Operates mixing, kneading equipment, steam jackets, kettles ,and other equipment as necessary, observing all safety practices. Sets proper oven temperatures and operates ovens. Prepares cornbread dressing, pancake mix, and biscuit toppings for food support workers as needed.
- Cleans and sanitize equipment and work areas.
- Prepares breakfast items
- Prepare all cold food items for breakfast tray line, portion and plate items
- Attends in-service training and meetings as assigned.
- While on duty, follows and carries out Florida State Hospital, Unit/Department Safety Practices and policies.
- Performs other related duties as assigned.
- Knowledge of the equipment, procedures and techniques used in cooking, baking, and/or meat cutting.
- Knowledge of the procedures for maintaining sanitary working conditions.
- Ability to perform food service functions in one or more of the following areas: cooking, baking or meat cutting.
- Ability to read and follow recipes and/or other instructions.
- Ability to plan, organize and coordinate work assignments.
- Ability to establish and maintain effective working relationships with others.
- One year of food service experience; or
- Completion of a program of study from a vocational/technical school in a food service area.
