The Department of Corrections, Division of Institutions, is recruiting for a Food Service Lead position, at the Fairbanks Correctional Center (FCC) located in Fairbanks, Alaska.

What you will be doing:
The Food Service Lead supervises prisoner kitchen workers in the preparation and production of meals for approximately 300 prisoners and staff per meal while maintaining the security and control of prisoners in the absence of Correctional Officer Staff.

Ensures meat pulls are consistent with prepared menu, oversees actual preparation and serving of food to inmates and staff, that all modified diets are properly prepared for each meal, which includes, but is not limited to, vegetarian, diabetic, allergy, disruptive inmate diets, religious diets, and other diets as prescribed by the Medical Department.

Ensures the baking and preparation of all pastry items, e.g., cakes, pies, cookies, puddings and breakfast pastries and oversees and instructs prisoners in the areas of cooking, baking, sanitation, nutrition and portion control.

Hire and fire inmate staff, schedule inmate shifts and inmate payroll.

The working environment you can expect:
Fairbanks Correctional Center is a pre-trial facility which houses up to 300 inmates and 98 employees. We are a smaller facility that has a family type atmosphere. We are in town and the commute is short.

Who we are looking for:
The ideal candidate will possess the following strengths, skills, and abilities:
  • Considerable knowledge of principles, tools, and techniques of food service management, including planning, budgeting, purchasing, staffing and supervision.
  • Considerable knowledge of general principles of menu planning, modification of recipes, preparation of foods for modified diets.
  • Considerable knowledge of inventory control procedures, procurement and storing of food items and supplies.
  • Considerable knowledge of practices, methods and procedures of volume food preparations; food values, characteristics and nutrition; personal hygiene, food handling, sanitation, and safety precautions.
  • Ability to plan, organize, coordinate, and supervise the activities required for quality food preparation and serving.
  • Ability to adhere to and enforce food service procedures, polices or guidelines; maintain and prepare inventory controls and reports.
  • Ability to maintain proper safety and security precautions.
  • Ability to select, train and supervise prison workers.
  • Ability to maintain cooperative working relationship and promotes a climate of confidence with leadership, peers, prisoners, vendors and other contacts in the course of work.
  • This position requires the incumbent to have a Food Service Worker Certificate.

Minimum Qualifications

Vacancies in this job class are filled through Union referral, except for promotions, demotions, transfers, and emergency appointments.

  • List of 3 professional references that must include current or previous supervisors.

  • Any certification that are pertinent to the job

PREA NOTIFICATION
The Department of Corrections follows and maintains federal and state requirements standards including, but not limited to, Prison Rape Elimination Act (PREA) standards which apply to all public and private institutions that house adult or juvenile offenders. PREA standards preclude the department from hiring or promoting anyone who has engaged in, or been convicted of any conduct which would violate PREA standards related to sexual assault including:
  • Sexual abuse in a prison, jail, lockup, community confinement facility, juvenile facility, or other institution;
  • Convicted of engaging or attempting to engage in sexual activity in the community facilitated by force, overt or implied threats of force, or coercion, or if the victim did not consent or was unable to consent or refuse; or,
  • Has been civilly or administratively adjudicated to have engaged in the activity described above.

EDUCATION
If post-secondary education is required to meet the minimum qualifications, you must fill in the Education section of the application. If you have not obtained a degree, please indicate the number of units completed. Copies of transcripts are required to verify educational credentials if used to meet the minimum qualifications for a position. Transcripts can be attached at the time of application or provided at the time of interview.

SPECIAL INSTRUCTIONS FOR FOREIGN EDUCATION
Education completed in foreign colleges, universities, or high schools may be used to meet the minimum qualifications listed above. If utilizing this education, you must show that the education credentials have been submitted to a private organization that specializes in interpretation of foreign educational credentials and that such education has been deemed to be at least equivalent to that gained in conventional U.S. education programs; or an accredited U.S. post-secondary institution reports the other institution as one whose transcript is given full value, or full value is given in subject areas applicable to the curricula at the post-secondary institution or high school. It is your responsibility to provide such evidence when applying.

WORK EXPERIENCE
If using work experience not already documented in your application, also provide the employer name, your job title, dates of employment, and whether full-or part-time. Applications will be reviewed to determine if the responses are supported and minimum qualifications are clearly met. If they are not, the applicant may not advance to the interview and selection phase of the recruitment.

CRIMINAL HISTORY CHECKS/APSIN/ACOMS
Please be aware – this position requires the use of the Alaska Public Safety Information Network (APSIN)/Alaska Corrections Offender Management System (ACOMS). A security clearance issued by the Department of Public Safety (DPS) is necessary to use APSIN/ACOMS. DPS will deny security clearance for any applicant who has been convicted of a felony or misdemeanor in this state or another jurisdiction, or who may be a fugitive from justice. Additionally, security clearance will be withdrawn if DPS discovers that material information was falsified or omitted at the time of the initial application for security clearance.
