PRIMARY PURPOSE OF JOB:

To control the day to day running of the kitchen and assist the chef in achieving (and exceeding) company standards.

The sous chef / kitchen manager is the second in command in the kitchen acting as the Executive Chef’s direct assistant. The sous chef is assigned scheduling tasks and is in charge when the Chef is off duty. When required , the sous chef fills in or assists kitchen to ensure the kitchen runs smoothly and efficiently.

SUMMARY OF DUTIES AND RESPONSIBILITIES

To act in the manner of a business person as if the business was their own.

Able to perform opening, closing and mid shift operations and procedures in the absence of Chef through proper judgement, decision making, and professional integrity

Demonstrate and execute a supervisory style which motivates and promotes effective use of subordinates i.e. leading by example.

Schedules all kitchen employees in a manner of keeping labor costs low

Anticipates trends by effectively staffing or cutting Controls food costs by: Helps select and train kitchen staff

Oversees the preparation and service of food i.e. Prep, cooking, handling and presentation Ability to perform general inventory duties

Anticipate and forecast trends i.e. weather, sports seasons, Braintree events and adjusts accordingly

Completes daily food orders with conjunction of catering/function events for projected levels of business.

Executes the enforcement of all health and safety standard of the kitchen

Adhere to Health Dept. food and sanitation guidelines - ServSafe a plus

Kitchen employees consistently maintain uniform standards

Conducts regular inspections of kitchen/dish washing areas, coolers, Identify and resolve problems in an efficient manner with restaurant's priority.

Communicates with all FOH and BOH staff in a respective efficient manner.
