Southfork Restaurant has been serving the Gurdon community since 1985, and we're proud to be known as a high-volume, local favorite. We are seeking a hands-on Kitchen Manager to lead our back-of-house operations. This is an opportunity to take ownership of the kitchen, build a strong team, and make a real impact on food quality, cost control, and guest experience.
Responsibilities
· Lead and supervise all BOH staff (line cooks, prep, dishwashers).
· Control food and BOH labor costs (10–15% of sales) through scheduling, ordering, and portioning.
· Order from approved vendors, inspect and log deliveries, and manage inventory using inventory control system.
· Maintain strict food safety and sanitation standards — always prepared for inspection.
· Enforce standardized recipes, portion control, and plating standards.
· Train, coach, schedule, and discipline BOH staff as needed.
· Manage equipment cleaning, maintenance, and repair schedules.
· Step into any BOH station (grill, prep, dish) to support operations during peak times or labor shortages.
· Deliver weekly BOH performance reports to General Manager.
Qualifications
· 3–5 years BOH leadership experience (Sous Chef, Kitchen Supervisor, or Kitchen Manager).
· Proven ability to control food cost and waste in a high-volume kitchen.
· Strong background in ordering, receiving, and inventory control.
· ServSafe Manager Certification (or ability to obtain within 30 days).
· Ability to lead, coach, and discipline staff in a fair, professional manner.
· Strong organizational skills with commitment to logs, checklists, and accountability systems.
· A culinary degree or formal training is preferred but not required.
· Must be comfortable working hands-on during peak service.
Compensation & Benefits
Base Salary: $30,000 – $50,000 annually, depending on experience.
· Tiered Performance Bonus: uncapped, based on:
· Food cost % at or below 30%
· BOH labor % between 10–15%
· Waste/spoilage below 2%
· Sanitation compliance and inspection results
· Paid time off after probationary period.
Schedule: Full-time, flexible hours including evenings, weekends, and holidays.
· Full-time, 40–50 hours per week.
· Evenings and weekends required.
