We are looking for a number two who can run the floor like it's their own room. Shiraz Kitchen in White Plains is a Persian-Mediterranean restaurant with a serious kitchen, an à la carte sushi program, and a wine list more than 235 bottles deep. The Assistant General Manager owns service night to night and keeps the standard high whether or not the GM is in the building.

We serve lunch and dinner daily, run a happy hour at the bar, and serve sushi Tuesday through Saturday.
About the RoleTwelve months in, you know every regular by name, your service team runs clean and calm on a full Friday, and the GM trusts you to close the building. You will have tightened the details guests feel but rarely name. Pacing. Table touches. The handoff between the bar and the dining room. The wine service that comes with a list this size. This is a hands-on floor leadership role, not a desk job.
What You'll Do- Run service. Lead the floor through lunch, dinner, and happy hour. Own pacing, seating, and guest recovery, and step in anywhere on the floor when the room needs it.
- Lead the front-of-house team. Hire, train, schedule, and coach servers, bartenders, hosts, and runners. Set the standard and hold the team to it.
- Own the guest experience. Be the person guests look for. Handle issues directly, build relationships with regulars, and keep the room feeling looked-after.
- Support the wine and bar program. Keep the team fluent on a list of more than 235 wines, partner on inventory and pours, and make sure bar and dining service move as one.
- Stand in for the GM. Open and close, manage the nightly numbers, and carry full responsibility for the room when the GM is off.
- Keep the operation tight. Track labor and service costs, manage reservations and private bookings on the floor, and keep health and safety standards clean.
- Three or more years in full-service restaurant management, as an AGM, floor manager, or service manager.
- Experience leading a front-of-house team through a busy dinner service.
- Comfort with wine service and a willingness to learn a large list in depth.
- Steady under pressure, direct with people, and present on the floor rather than behind a screen.
- Available nights, weekends, and holidays.
- Background in upscale or chef-driven dining.
- Familiarity with sushi or omakase service.
- Working knowledge of reservation and POS systems.
- A real interest in Persian or Mediterranean food and hospitality.
- Salary: $85,000 to $95,000 per year, based on experience.
