Broma is seeking an experienced, passionate, and highly motivated Sous Chef to join our dynamic culinary leadership team. As Sous Chef, you will play a critical leadership role in overseeing daily kitchen operations, food preparation, staff supervision, menu execution, inventory management, and food safety compliance. You will partner closely with the Executive Chef to deliver innovative cuisine, maintain exceptional culinary standards, and create memorable dining experiences for every guest.
This role is ideal for a hands-on culinary leader with experience in upscale dining, banquet operations, catering, or hospitality-driven restaurant concepts who is ready to grow within an expanding restaurant and hotel group.
Key Responsibilities- Assist the Executive Chef in managing all kitchen operations, including food production, prep execution, line operations, ordering, inventory management, scheduling, and labor oversight.
- Lead, coach, and supervise kitchen staff during service while fostering a positive, high-performance team culture.
- Ensure consistency, presentation, portioning, and quality standards for all dishes.
- Maintain strict compliance with food safety, sanitation, HACCP, and health department standards.
- Support menu development, recipe creation, seasonal offerings, and culinary innovation.
- Coordinate banquet, catering, and special event food execution for large groups and private dining experiences.
- Manage inventory controls, food costing, waste reduction, and purchasing procedures to maximize operational efficiency.
- Train and mentor culinary team members on cooking techniques, kitchen procedures, plating standards, and safety protocols.
- Collaborate with front-of-house leadership to ensure seamless service and exceptional guest satisfaction.
- Maintain a clean, organized, and efficient kitchen environment while ensuring compliance with company policies and safety standards.
- Minimum 3 years of Sous Chef, Kitchen Manager, or culinary leadership experience in a restaurant, hotel, resort, fine dining, upscale casual, or hospitality environment.
- Previous experience supervising and developing culinary teams in a high-volume kitchen.
- Experience with banquet operations, catering, events, or large-scale food production preferred.
- Strong understanding of kitchen management, inventory systems, labor controls, ordering, and food cost management.
- Knowledge of food safety regulations, sanitation procedures, and proper food handling practices.
- Skilled in menu planning, recipe execution, plating, and modern cooking techniques.
- Ability to lead under pressure while maintaining professionalism, organization, and attention to detail.
- Strong communication, leadership, and problem-solving abilities.
- Flexibility to work evenings, weekends, holidays, and high-volume service periods as needed.
- Culinary degree or formal culinary training preferred but not required.
