BROAD SCOPE OF POSITION: Manage the overall operation of the Food Service Department, to include staffing, food ordering and accountability, preparation, menu planning, food delivery and kitchen cleanliness in accordance with appropriate health department regulations to include the safety of food consumption; and Sedona Winds policies & procedures. Control food costs.

Pay range depending on experience.

ESSENTIAL JOB FUNCTIONS:

· Hire, supervise, train and schedule all dietary staff.

· Make job assignments and set priorities.

· Evaluate performance and give feedback.

· Ensure all equipment is maintained in good working order and all work areas in the kitchen are clean, safe and orderly.

· Adhere to procedures regarding infection control, food borne illness prevention, chemical handling and fire and safety procedures.

· Conduct regularly scheduled inventory.

· Maintain food cost within budgetary constraints.

· Maintain proper inventory of food and supplies.

· Plan all community menus and special event menus.

· Ensure food is prepared in a nutritional, appetizing fashion and presented in an attractive manner.

· Ensure all utensils, dishes and equipment are cleaned on an ongoing basis.

· Inspect food storage procedures and adhere to health department regulations.

· Attend in-service or training as required.

· Conduct all training for kitchen personnel regularly.

· Meet all requirements by health department.

· Ensure compliance and understanding of all resident’s rights issues.

NON ESSENTIAL JOB FUNCTIONS:

· Other duties as required.

PHYSICAL & SENSORY REQUIREMENTS:

(With or without the aid of mechanical devices)

· Walking, bending

· Lifting, reaching, grabbing.

· Pushing and pulling.

· Distinguishing smells, tastes and temperatures.

· Fine hand coordination.

· Reading and writing.

· Communicate with residents, families, guests and other staff members.

· Remain calm under stressful conditions.

EDUCATION OR QUALIFICATIONS:

· Must be formally trained in the culinary arts or in food service management.

· Two years of college education preferred.

· Must meet all health requirements.

· Must be able to relate positively and cooperatively to residents and staff.

· Must be capable of maintaining full-time attendance and be available by phone seven days a week.

EXPERIENCE:

· Two years working in food service management.

· Knowledge or experience in senior housing or long-term care preferred.

· Some exposure to hazardous waste or communicable diseases.
