Position Summary:
The Meat Cutter / Production Associate is responsible for skilled meat cutting, portioning, trimming, grinding, and preparation of meat and poultry products according to company and customer specifications. This individual plays a critical role in maximizing yield, ensuring product consistency, and preparing high-quality products for fulfillment, retail, and wholesale distribution. The Meat Cutter / Production Associate must work quickly, safely, and cleanly with a variety of proteins and cut types in a cold, fast-paced production environment.
Essential Functions, Duties & Responsibilities:Cutting & Portioning
- Fabricate beef, pork, lamb, poultry, and other meat products from primal, sub-primal, or pre-trimmed form into steaks, chops, roasts, portions, grind, or other finished items with accuracy and care.
- Follow cut specifications for weight, thickness, trim level, shape, and style by customer, SKU, or production need.
- Use proper cutting and trimming techniques to maximize yield while minimizing waste and trim.
- Perform secondary trimming, portioning, grinding, tying, or value-added preparation as needed.
- Assist with daily production lists and ensure items are completed accurately and on time.
Product Quality & Traceability
- Inspect meat and poultry quality during cutting for discoloration, bruising, off-condition product, foreign material, or other quality concerns.
- Ensure all finished products are clean, properly trimmed, accurately portioned, and meet company standards for quality and presentation.
- Follow lot tracking, labeling, dating, and rotation protocols as directed.
- Maintain proper separation of species, allergens, raw products, and ready-to-eat products throughout workflow.
- Communicate product shortages, quality concerns, or specification issues to leads or supervisors immediately.
Workstation & Sanitation
- Keep cutting station, tables, scales, knives, saws, grinders, packaging areas, and surrounding work areas clean and organized.
- Sanitize tools, equipment, and surfaces as required throughout the shift and between product changes.
- Follow food safety standards, GMPs, PPE usage, and cross-contamination controls.
- Dispose of trim, scraps, and unusable product properly according to company procedures.
- Assist with post-shift cleanup, sanitation, and organization of production areas.
Team Collaboration
- Communicate with leads and supervisors regarding yield feedback, cut errors, order needs, product shortages, or production priorities.
- Support picking, packing, labeling, inventory, receiving, or general fulfillment teams as needed during high-volume days.
- Work with team members to complete production accurately, safely, and within required timelines.
- Assist in training new cutters, apprentices, or production associates in cut styles, product handling, sanitation, and safety procedures.
- Maintain a professional, team-focused attitude and support the overall needs of the operation.
Required Qualifications:
- 1–2 years of meat cutting, butchery, food production, or related experience strongly preferred.
- Strong knife skills and comfort working with beef, pork, lamb, poultry, and other meat products.
- Ability to read cut specifications and perform accurate portioning by weight, thickness, and customer requirement.
- Able to stand for extended periods, lift up to 50 lbs, and perform repetitive cutting in a cold production environment.
- Experience with grinders, saws, slicers, scales, vacuum packaging, or other food production equipment is a plus.
- Must be dependable, punctual, safety-conscious, and able to work in a fast-paced team environment.
Pay: $20.00 - $25.00 per hour
Expected hours: 35.0 – 42.0 per week
