Position Overview
The Back Waiter / Busser plays a key role in delivering an exceptional dining experience by supporting the front service team and maintaining the highest standards of cleanliness, organization, and efficiency. Working closely with Servers, Sommeliers, and Management, this role ensures a seamless flow of service, anticipating guest needs with precision and grace in a refined fine dining environment.
Duties and Responsibilities
- Maintain the dining room’s cleanliness, organization, and readiness for service at all times.
- Clear, reset, and re-stage tables promptly between courses and seatings while adhering to fine dining presentation standards.
- Assist Servers in delivering food and beverages, ensuring precise timing and elegant presentation for synchronized service.
- Refill water glasses, bread, and accompaniments proactively while remaining discreet and attentive to guest cues.
- Remove used dishes, flatware, and glassware quickly and quietly to maintain a clean and polished table setting.
- Support Sommeliers and Servers in proper table mise en place, including glassware and wine service setup.
- Maintain all side stations, bussing areas, and service corridors in impeccable order, fully stocked and organized throughout the shift.
- Assist in preparing and delivering trays, amuse-bouches, and accompaniments as directed by the Server or Manager.
- Communicate clearly and efficiently with the kitchen and service teams to ensure proper pacing and coordination.
- Uphold sanitation and safety protocols while handling dishware, glassware, and service equipment.
- Exhibit professionalism and attentiveness at all times, maintaining a calm, polished demeanor even during peak service periods.
- Support additional dining outlets or service areas when business levels require.
Qualifications and Requirements
- Previous experience in fine dining, luxury hospitality, or an upscale restaurant preferred.
- Strong communication skills and ability to work cohesively within a professional service team.
- Exceptional attention to detail, cleanliness, and organization.
- Ability to multitask and perform efficiently in a fast-paced, high-volume environment.
- Polished appearance, positive attitude, and commitment to providing gracious, anticipatory service.
- Flexible availability including evenings, weekends, and holidays.
- Physical ability to lift and carry trays up to 25 lbs, stand for extended periods, and move swiftly between service areas.
