Join Celebrity Chef Charlie Palmer to open Paso Robles' newest and only rooftop bar, Salina. Perched atop The Piccolo at Paso Robles Inn above the Paso Robles town square, Salina is where wild roots meet high vibes. Debuting June 2026.
Charlie Palmer Collective is seeking Pastry Cooks who have a profound interest in food and wine, the drive and experience to support the culinary program for a historic property that services multiple F&B outlets, and a passion to meet the highest standards in our industry. This opportunity will work and coordinate with the property’s Director of Culinary, Chef Palmer, positioning this individual to grow under one of the most renowned Chef's and culinary brands in the country.
Role and Responsibilities:
- Report to Sous Chef and Director of Culinary supporting daily kitchen operations across all property F&B outlet
- Must adhere to the company’s Service culture – 4 Keys to creating guests for life.
- Must align with Peregrine Hospitality TBO Strategy and focus on recruiting and retaining top talent.
- Must actively participate in team member referral program and be a Talent Ambassador for Paso Robles Inn
- Maintain a positive and professional approach with coworkers and customers.
- Follow and adhere to all property SOPs, policies and procedures.
- Stay updated on culinary trends and techniques.
- Must participate in all hotels required meetings and trainings.
- Maintain high standards of personal appearance and grooming, which includes wearing the proper uniform/business attire and nametag.
- Ability to run the shift with minimal supervisor in addition to training and guiding new team members.
- Participates in production and quality of baked goods such as breakfast pastries, breads, cakes, cold desserts, and other various pastries to meet resorts’ standards.
- Must be able to follow the recipes and measure the ingredients correctly.
- Operates all commercial kitchen equipment and bake shop equipment correctly and in a safe manner.
- Fills out food requisitions to order baking supplies from Purchasing.
- Must be able to self-manage projects.
- Responsible for multiple BEOs and/or multiple outlet production.
- Maintains high standards of cleanliness and sanitation at workstation and other work areas.
- Assist in training new employees, as needed.
- Assists in continually teaching pastry skills to other pastry cooks.
- Abide by all resort policies and safety rules.
- Perform other duties as requested by management.
Prerequisite Qualifications:
- Minimum 2 years’ experience in a qualified position and property food & beverage division, preferably in a luxury hotel or fine dining environment
- Proven experience as a cook, preferably in a hotel or high-volume kitchen environment
- In-depth knowledge of food safety standards and kitchen sanitation practices
- Experience in Pastry/Bakery is required.
- Strong team player mentality
- Previous pizzeria or artisan pizza experience preferred
- Ability to work under pressure and manage multiple tasks efficiently
- Excellent communication and organizational skills
- Flexible schedule availability, including weekends, holidays, and special event day

This is a guest-facing position where interaction with guests will be a regular part of the role. Candidates should possess a positive attitude, professional appearance, and friendly demeanor. Strong communication skills, patience, and the ability to remain composed and hospitable in a busy environment are essential.
Physical Requirements:
The minimum physical requirements for this position include but are not limited to:
- Must be able to lift and/or carry up to 40 pounds frequently to assist guests
- Ability to stand for extended periods of time
- Ability to hear, understand and communicate orally and in writing to communicate with staff, vendors and guests a normal in-person and phone conversation
- Ability to bend and twist, push and pull, stoop, and kneel
- Long hours sometimes required.
