What are the responsibilities and job description for the Lead Artisan Bread Baker position at Sacré Sucré?

As our Lead Artisan Bread Baker you will be responsible for the preparation and baking of naturally leavened ("sourdough") bread according to SACRE SUCRE's quality standards and practices. You will also be responsible to provide and ensure a positive image by providing guidance to other team members, being communicative and being a valuable team member.

Responsibilities:

  • Run and lead the bread program at the bakery.
  • Responsible for the daily production of bread.
  • Develop, adjust and adapt bread recipes depending on the bakery's needs at a specific time.
  • Oversee and ensure the process of mixing, rounding, dividing, shaping, scaling, proofing and baking go according to our daily production and with consistency
  • Familiarity with bake times, convection (fan assisted) baking and conduction (deck) baking to ensure consistency in daily production.
  • Review quantities of bake and adjust according to bakery needs.
  • Minimize waste and over production.
  • Unload, re-stock and put away ingredients such as flour bags, scales, spices, dairy, etc.
  • Responsible for quality control: must be detailed-oriented and dectect issues with bread bakes, defective equipment, etc.
  • Communicates with the head chef on a daily basis about updates or issues associated with bread.
  • Responsible to follow all health and food safety regulations.

Qualifications:

  • Full understanding of naturally leavened (sourdough) doughs to include traditional sourdough, 100% whole wheat, pain de campagne, etc
  • Able to work with different starters such as liquid, stiff, lievito madre, etc
  • Able to feed, strenghten and maintain different starters (rye, spelt, whole wheat)
  • Must be able to work with both free-hand shaped and banetton bread
  • Must be able to mix large batches of bread, divide, shape, proof and bake
  • Able to make other types of classic french breads such as baguettes, fougasse, tourte de seigle, pain de campagne, etc.
  • Able to work both independetly and in a team
  • Able to move 50lb bags
  • Lift or carry heavy ingredientes not to exceed 50lbs
  • Able to work 8-10 hour shifts between Tuesday and Sunday
  • Must be able to work independently
  • Able to follow instructions and procedures.
  • Able to work with a team.

  • Attendance and punctuality is a must.
  • Stand and walk for extended period of times

Schedule:

This position requires a combined schedule of early morning shifts (4am-1pm) and regular shifts (9am-5pm) as needed. For example, you may be required to work 3 early morning shifts and 2 regular shifts on a weekly basis. You may also be required to work 10 hour shifts to complete your daily tasks.

Job Type: Full-time

Pay: $23.00 - $26.00 per hour
