POSITION: Concessions Manager
STATUS: Full-Time/Exempt
DEPARTMENT: Food & Beverage
REPORTS TO: Director of Food & Beverage
SUPERVISES: Concessions & Bar Staff
POSITION CONCEPT:
To serve the Mission, Vision and Values of REH, Inc. by leading the concession area of operations including lobby bars and food service to maintain high customer service standards and meet budget goals. This position is responsible for procurement, inventory control, sales initiatives and supervision of concession personnel at Ruth Eckerd Hall, Bilheimer Capitol Theatre and The BayCare Sound.
ESSENTIAL FUNCTIONS:
- Develop and collaborate with team in the creation of new concession offerings to enhance the dining experience for guests, including consideration of emerging trends and tastes.
- Supervise the concession and bar staff including hiring, training, scheduling, development and direction to maintain and exceed service standards and goals.
- Manage inventory including placement of weekly product orders, verifying deliveries, ensuring operational controls and reconciling purchase orders and monthly inventory counts.
- Manage vendor relations with multiple suppliers of alcohol, wine, soft drinks, dry goods and concessions food including sponsorship partners.
- Ensure clear communication within the concessions team and with other F&B team members to support the overall customer experience.
- Stock bars and concessions with product according to par levels.
- Review stands sheets for accuracy.
- Manage all concession labor aspects including forecasting, tip allocations, cash handling procedures and timecard approvals.
- Reconcile sales with receipts and inventory at each point of sale at shift end.
- Coordinate maintenance of house and external concessions equipment.
- Transport product and equipment to additional venues and offsite events.
- Log and monitor alcohol service violations by bar staff to support responsible pour guidelines.
- Serve as liaison to Point of Sale vendor for troubleshooting and service issues.
- Troubleshoot and manage refund transactions for customer service.
- Serve as resource for special events assisting other departments with their service goals.
- Other duties as assigned.
QUALIFICATIONS:
Education:
- Two-year college degree or equivalent education and experience in the field.
- ServSafe Certified or willingness to complete and pass the necessary exam to become certified.
Experiences:
- Three years’ experience in hospitality industry preferred.
- Two years’ supervisory experience with demonstrated leadership skills.
- Stadium, arena, and/or Amphitheatre experience preferred.
Demonstrated Skills or Knowledge:
- Knowledge of procurement and cost management
- Demonstrated success in staffing and performance management
- Ability to create and implement operational plans.
- Knowledge of health regulations, OSHA compliance, tax regulation, alcohol licensing and liability, and other legal requirements within the food service industry.
- Proficient in Outlook, Excel and Word.
- Demonstrated commitment to the principles of teamwork and shared responsibility.
- Ability to multi-task and meet simultaneous deadlines.
- Ability to plan, organize, and coordinate people, tasks and projects for efficiency.
- Ability to relate to a diverse group of people.
- Ability to communicate effectively and persuasively both orally and in writing.
- Ability to operate basic office equipment such as copier, fax machine, telephone, computer and printers.
- Ability to anticipate problems or to identify them before significant impact on service delivery, expenses or revenues.
- Basic knowledge of ADA, safety regulations and fire codes as it relates to delivery of services.
Physical Demands:
- Ability to lift and carry up to 50 lbs.
- Ability to bend, stoop, kneel, and stand for periods of time.
- Ability to drive.
- Ability to maintain good attendance is a condition of employment and a function of this position.
Other:
- Valid driver’s license and safe driving record.
- Ability to work weekends, evenings, long and irregular hours, including holidays.
- Successful completion of background check and drug screen.
