EXPERIENCE

1 years experience with bread programs including sourdough

1 years experience with menu development & plated desserts

SKILLS

· Able to utilize produce as it is available seasonally, large and small batches

· Able to produce breads and desserts for up to 300 people.

· Basic cleanliness and correct storage of food

Scratch Kitchen: breads, desserts, canning, preserving, and charcuterie done in house

Large, convenient work area: Bake shop stores all sheet trays and table-top appliances as well as two speed racks, proofer, convection oven, reach-in cooler. Large windows overlooking beautiful grounds. Music can be played outloud because the bake shop is furthest from the dining room.

Menu control: All desserts developed by team, including you. The team meets monthly to try out and collaborate on new dishes.

Location: Maryville is between Knoxville and the Smoky Mountains and a few hours drive from Asheville, Nashville, Atlanta. Knoxville is about 30 minutes away and has inexpensive housing, lots of parks, a solid beer culture and a growing food scene. Also a great city for dog owners.
