Description:
1. Supervise kitchen operations in the absence of the dietary services coordinator.
2. Handle and prepare food in a sanitary manner and observe infection control procedures.
3. Prepare all regular and special menu items for all meals according to the menus.
4. Follow written menus and recipes.
5. Understand and be able to prepare therapeutic diets.
6. Prepare special food requests for residents.
7. Be responsible for avoiding food waste.
8. Assume responsibility for meeting meal schedules.
9. Be responsible for the care of food service equipment.
10. Keep the work area clean and sanitize work surfaces after food preparation. Break down and clean your work area as assigned by the cleaning schedule. Clean pots, pans, and other wares as necessary.
11. Be familiar with and comply with all state and local health department practices, safety practices, and infection control practices.
12. Promptly discuss and resolve any potential food services and care coordination problems with all involved team members and team leaders.
13. Label and date all food before storing.
14. Wash soiled dishes and load dishwasher properly.
15. Operate an automated dishwasher with a solution-dispensing system.
16. Sort clean dishes, transport to the storage area, and store according to dietary procedures.
17. Work cooperatively with food service staff and other departments.
18. Observe all facility policies and procedures.
19. Come to work in a clean, neat uniform and consistently present an appropriate professional appearance.
20. Come to work as scheduled and consistently demonstrate dependability and punctuality.
