What are the responsibilities and job description for the Prep Cook/Dishwasher position at Rogue Island Local Kitchen & Bar?
Job purpose To prepare, cook and present food quickly and efficiently. To ensure that all food prep is done. The help kitchen manager on the line ensures all food quality is up to restaurant standards, and delivered to guests in a timely manner. Follow all RI Health laws, and follow daily cleaning put forth by the kitchen manager. Duties and responsibilities Manage the opening and closing of the kitchenPrepare, cook and present food, quickly and efficiently, meeting our standardsAssist in keeping the kitchen clean, hygienic and tidy, & up to RI Health Laws at all times. Also follow kitchen managers daily/weekly/monthly cleaning lists.Keep up to date with current promotions, specials, new menus, and new productsWork safely around kitchen equipment. Monitor & make known of any maintenance issues to kitchen manager/owners.Take an active role in the recruitment of new staff members & treat them equallyHelp the kitchen manager use food development to drive sales & increase foot trafficMake known of all product that is low or out of stock to the kitchen managerAssist in achieving financial targets set for the restaurantsManage wastage through correct product measurement & follow the Rogue Island Recipe IndexMaintain personal knowledge by completing in-house training, attending courses and completing seminars/classes to improve as a individual as well as a wholeAlways adhere to all company policies and proceduresBe involved and contribute at team meetingsCarry out instructions given by the kitchen manager or ownersFollow FIFO & make known of any product before it goes bad when possible to run specials or try to use it to eliminate wasteFollow the prep list on a daily basis, and when slow always keep busy, and follow it.Stay off all phones. If you need to use your phone make it known to the kitchen manager before doing so with approval Qualifications US CitizenshipProfessional Certification (ServSafe)Culinary or Food Service Degree1 Years Of ExperienceAbility To Stand On Feet For Long Periods Of TimeAbility To Work IndependentlyStrong Leadership Skills Working conditions Must be able to work in hot & cold conditions. Must be able to work in kitchen atmosphere for up to 50 hours as needed and a requirement of at least 40 hours. Physical requirements Must be able to life 50 pounds. Must be able to go up 15 flights of stairs with no issues physically. Direct reports Any new kitchen members that need guidance or help adapting to a new environment. Dishwashers will need to be watched & directed sometimes, and not always can the kitchen manager be there. Help out the dish pit when needed or keep them busy with prep or side cleaning.
