JOB TITLE: Kitchen Steward
STATUS: Full or Part Time
FLSA: Non-exempt
JOB GRADE: HG3
REPORTS TO: Sous Chef
SUPERVISES: N/A
WORKING HOURS: This is an hourly position. The incumbent is expected to be flexible and available to work any hours, but work is primarily late nights to early mornings, and weekends to meet the needs for a 24 hour establishment.
SUMMARY: Washes china, silverware, glassware, pots and pans. Empties trash. Wash down mats. Keeps kitchen and respective areas clean and organized. Performs heavy duty and deep cleaning.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
1. Does all ware washing and maintains a clean and organized dish drop zone.
2. Washes all pots, pans and related items and maintains a clean organized pot sink area.
3. Puts away all washed and dried items in their respective locations.
4. Maintains proper chemical levels and stocks back-up chemicals when necessary.
5. Uses kitchen equipment as instructed to insure safety and proper care of equipment.
6. Removes trash as necessary to outdoor dumpsters and maintain cleanliness of all trash receptacles.
7. Breakdowns cardboard boxes and removes to designated area.
8. Sweeps and mops the floor as instructed by the F&B STM on staff.
9. Deep cleans kitchen and respective areas as instructed.
10. Cleans and organize all shelves, walk-ins, storeroom and back dock area.
11. Assists with China, glass and silver ware inventories on a monthly basis, using department count sheets.
12. Maintains a monthly sanitation review sheet, and communicates findings with F&B STM.
13. Performs scheduled heavy duty equipment cleaning, and is able to disassemble and reassemble all kitchen equipment for this purpose.
14. Assists cooks and prep cooks with tasks as requested.
15. Assists with training of new and current team members regarding stewarding duties.
16. Commits to the Team R.O.C.K. Philosophy.
17. Acts as a role model and always present oneself as a credit to River Rock Casino and encourages others to do the same.
18. Meets the attendance guidelines of the job and adheres to regulatory, department and company policies and procedures.
19. Attends all required meetings and training.
20. Maintains confidentiality at all times.
21. Performs other duties as assigned.
QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and ability re-quired.
1. At least 2 years prior Steward and/or commercial kitchen cleaning experience required.
2. Must be able to work independently with minimal supervision.
3. Must be able to get along with co-workers and work as a team.
4. Must present a professional appearance and in uniform at all times.
5. Must be able to maintain a high degree of confidentiality with respect to all matters pertaining to the gaming enterprise business.
EDUCATION:
1. High School Diploma or equivalent GED preferred.
LANGUAGE SKILLS:
1. Bilingual skills preferred. Excellent communication skills are important to the successful conduct of this position.
2. Must be able to speak with the public in a professional manner.
MATHEMATICAL SKILLS:
1. Ability to add, subtract, multiply, and divide in all units of measure as related to the position.

PHYSICAL DEMANDS:

3. Must be able to carry, pull and push the weight needed to perform the duties of the job.
4. Must be able to sit and/or stand for extended periods of time.
5. Must be able to respond to visual and aural cues.
