What are the responsibilities and job description for the Sous Chef PM Banquets position at River Oaks Country Club?
- Assists with food production for banquet functions including menu planning and personnel supervision and for holiday buffets, Sunday brunch and other special occasions including menu development, costing and execution
- Order all food for banquet functions, writing prep lists, upholding quality standards and adhering to timelines
- Assists in the hiring, training and on-going supervision of all employees involved with banquet food production
- Maintains and upholds professional standards of conduct and appearance
- Manages against established food cost budget
- Maintaining harmony in the kitchen and establishing positive relationships with the front of the house team
- Supervising the kitchen in the absence of the Executive Sous Chef and Executive Chef
- Oversees process of food product being covered, dated and properly rotated
- Ensures that all storage areas, walk ins and reach ins are neat and cleaned on a daily basis
- Responsible for keeping all commissary food areas stocked, ordered and organized in a professional manner
- Oversees closing procedures and ensures the kitchen is in good order at the completion of the shift
- At least 4 years of experience in a full-service upscale dining establishment
- Student/Graduate of an accredited culinary program is preferred
- Experience running a shift without direct supervision
- 2 years' experience in a banquet operation preferred
- Thorough knowledge of the back of house operations
- Able to commute to our location with reliable transport
- Comfortable to delegate both routine and important tasks to direct reports
- Able and willing to correct performance of direct reports
- Enjoys working hard and seizing opportunities as they present themselves
- A clear communicator; Able to establish clear direction for the team
- Able to prioritize effectively and concentrate on the most critical tasks
