Poulet Bleu is a French-inspired bistro in the heart of Lawrenceville. We feature elegant desserts in the French culinary technique in a modern, seasonal style. We are seeking a dedicated Pastry Assistant to support our pastry program and grow within our team.
This full-time position assists with both production and service. We are looking for someone with a strong foundation in pastry, a willingness to learn, and a passion for creating exceptional desserts.

Requirements
- 2 years of high-volume, upscale and fast-paced restaurant experience
- Open availability, including nights and weekends (shifts may end between 11 PM–12 AM)
- Eagerness to learn and the ability to adapt quickly to a dynamic kitchen environment
- Strong attention to detail and the ability to follow direction from the Pastry Chef
- A positive attitude and a passion for excellence and high service standards
- Ability to stay focused and work well under pressure
- A genuine love of modern food, desserts, and hospitality
- Ability to stand, walk, bend, and move throughout the entire shift, including frequent bending and stooping
