Position Overview
We are seeking a dynamic and hands-on Director of Restaurants to lead the daily operations of multiple dining venues within a luxury hotel environment. This role is responsible for driving exceptional guest experiences, operational excellence, and financial performance across all restaurant outlets.
The ideal candidate has a strong background in luxury hospitality, is highly visible on the floor, and brings experience with new restaurant openings, renovations, and concept development. This leader will work closely with culinary, beverage, and hotel leadership teams to ensure each outlet operates at the highest standard of service and profitability.
Key Responsibilities
Oversee all restaurant outlets within the hotel, ensuring exceptional service, consistency, and guest satisfaction
Provide hands-on leadership on the floor, actively supporting service and mentoring management teams
Lead the opening of new restaurant concepts and venue renovations, including pre-opening planning, hiring, training, and operational setup
Partner with the Executive Chef and Beverage leadership on menu development and service execution
Manage budgets, forecasting, labor costs, and overall financial performance of all outlets
Develop and mentor restaurant managers and supervisors to build a strong leadership pipeline
Implement service standards aligned with luxury hospitality expectations
Collaborate with marketing and hotel leadership to drive revenue and guest engagement
Maintain compliance with all health, safety, and brand standards
Qualifications
7 years of progressive restaurant leadership experience in luxury hotels, resorts, or fine dining environments
Proven experience managing multiple restaurant outlets
Experience with new restaurant openings, concept launches, or major renovations/remodels
Strong leadership presence with a hands-on, floor-focused management style
Proven financial management experience including P&L oversight, labor management, and cost control
Excellent communication and team development skills
Ability to work evenings, weekends, and holidays as needed
Preferred Qualifications
Experience in a upscale experience
Independent restaurant experience
Strong wine and beverage program knowledge
