We are seeking a motivated and skilled Sushi Cook / Assistant Sushi Chef to join our culinary team. This is an excellent opportunity for a chef who wants to continue developing their skills in a professional Japanese kitchen while working alongside experienced sushi chefs.
The ideal candidate is eager to learn, dependable, and capable of supporting every aspect of the sushi program. This role is designed for someone who enjoys being part of a team, takes pride in consistency, and is looking for long-term growth.
Responsibilities
- Assist the Head Sushi Chef with daily preparation and service
- Prepare fish, including butchering and portioning, under established standards
- Prepare appetizers and hot kitchen items as needed
- Assist with sushi production during service
- Maintain cleanliness, organization, and food safety throughout the kitchen
- Ensure proper storage, labeling, and rotation of all products
- Support inventory preparation and daily mise en place
- Step into the sushi station when needed and confidently support service in the event the Head Chef is unavailable
- Work collaboratively with the culinary team to maintain a smooth and efficient kitchen
Qualifications
- Previous experience working in a Japanese restaurant or sushi kitchen
- Experience with fish butchery and preparation preferred
- Ability to prepare appetizers and support both cold and hot kitchen operations
- Strong work ethic and willingness to learn
- Professional, organized, and dependable
- Comfortable working in a fast-paced, team-oriented environment
- Japanese language skills are a plus
