Position Summary:
The main duties and responsibilities include assisting with the daily meal preparation, salad bar setting, beverage preparation, setting up and cleaning tables, clean-up after meals, packaging and delivering meals using a tribal vehicle, transporting individuals to and from the meal site, and housekeeping inside and outside the building, as well as other areas. This position will also serve as a backup cook when needed.
Essential Job Functions:
- Prepare or direct preparation of food served using established production procedures and systems.
- Determine amount and type of food and supplies required using production systems.
- Ensure availability of supplies and food or approved substitutions in adequate time for preparation. Apportion food for serving.
- Set steam table; serve or ensure proper serving of food for tray line or dining room. Complete food temperature checks before service.
- Comply with established sanitation standards, personal hygiene, and health standards. Observe proper food preparation and handling techniques. Store food properly and safely, marking date and items.
- Report necessary equipment repair and maintenance to program director.
- Correctly prepare all food served following standard recipes and special diet orders.
- Plan food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved.
- Keep work area neat and clean at all times; clean and maintain equipment used in food preparation.
- All other duties as assigned.

- Must have a valid driver's license and be able to meet the minimum insurance requirements of the Quapaw Nation's Motor Vehicle Policy
- Perform tasks which are supportive in nature to the essential functions of the job, but which may be altered or redesigned depending upon individual circumstances.
- Prepare and serve food for special functions as assigned.
- Promote positive public relations with patrons, family members and guests.
- Assist with the preparation of monthly and annual reports as needed.
- Resolve problems with vendors and perform simple equipment maintenance.
- May attend professional meetings, pertinent workshops and serve on organization-wide and professional committees.
Job Specifications:
Knowledge, Skills and Abilities:
- Must have a valid driver's license and be able to meet the minimum insurance requirements of the Quapaw Nation's Motor Vehicle Policy.
- The incumbent must possess good reading and writing skills.
- Proficient interpersonal relations and communicative skills.
- Ability to follow written and oral instructions and procedures.
- Must possess and maintain skills necessary to safely and efficiently operate the equipment and machines used in the course of work, including, but not limited to oven, stove, dishwasher, slicer, coffee machine, steamer, mixer, and chef's knives.
- Must be able to use tactful, appropriate communications in sensitive and/or emotional situations.
- The incumbent must comply with the requirements for in-service training, acceptable attendance, uniform, and dress codes including personal hygiene, and other work issues.
Education & Experience:
- High-school diploma or equivalent is required.
- Must have a Food Handler's Card (or be willing to obtain one).
- Related experience in planning and preparing large quantities of food, knowledge of nutritional practices and food-handling methods, and ability to serve flavorful and attractive meals, as well as good communication skills are strongly preferred.
Physical Abilities:
The incumbent must be able to sit or stand for prolonged periods of time, as well as regularly reach above the shoulders; must be able to bend, kneel, stoop, climb, push, pull, and lift up to and including 70 pounds without experiencing physical discomfort or pain. Excellent eyesight – with or without vision correction – is mandatory. Must be able to respond to calls on short notice and to travel occasionally for attendance of seminars, lectures, etc.
Working Conditions:
A significant part of the work is performed in the designated cooking area, exposing the incumbent to moderately severe conditions involving excessive heat, cold, or noise level. May be working with hazardous equipment. The respective PPE is provided.
