Position Summary
The Bakery Supervisor/Lead is responsible for overseeing day-to-day bakery operations, leading a team of bakers and production staff, and ensuring the highest standards of product quality, food safety, and operational efficiency. This role serves as a critical bridge between management and production, driving continuous process improvement while maintaining full compliance with all applicable FDA regulations and state food safety requirements. Bilingual proficiency in Arabic and English is required to effectively support our team and serve our customer base.
Key Responsibilities
Team Leadership & Supervision
- Supervise, mentor, and schedule bakery staff to ensure efficient daily operations
- Conduct regular team briefings and training sessions in both Arabic and English
- Provide real-time coaching and performance feedback to production team members
- Assist in onboarding and training new hires on bakery procedures and safety standards
Bakery Operations & Production
- Oversee all daily production activities including baking, portioning, packaging, and display
- Ensure recipes, portion standards, and presentation guidelines are consistently followed
- Manage production scheduling to meet customer demand while minimizing waste
- Monitor equipment performance and coordinate maintenance and repair requests as needed
Process Improvement
- Identify operational inefficiencies and implement evidence-based process improvements
- Track key performance indicators (KPIs) such as yield, waste, throughput, and labor efficiency
- Collaborate with management to develop and refine standard operating procedures (SOPs)
- Propose and pilot new workflow methods, tools, or techniques that improve quality or productivity
- Document improvement initiatives and outcomes for reporting to Operations leadership
Food Safety & Regulatory Compliance
- Ensure full compliance with all FDA Food Safety Modernization Act (FSMA) requirements
- Maintain compliance with applicable state and local food safety codes and health department regulations
- Enforce proper HACCP (Hazard Analysis Critical Control Points) protocols throughout the production process
- Conduct and document daily temperature logs, sanitation checklists, and equipment cleaning records
- Lead preparation for internal audits and health department inspections; address corrective actions promptly
- Ensure all team members hold current food handler certifications and follow safe food handling practices
- Monitor and manage allergen controls, labeling accuracy, and cross-contamination prevention
Inventory & Quality Control
- Oversee receiving, storage, rotation (FIFO), and proper handling of all bakery ingredients and supplies
- Conduct daily quality checks on finished products for taste, appearance, texture, and weight
- Flag and quarantine any non-conforming products and complete incident documentation
- Assist in ordering and maintaining appropriate inventory levels to avoid overstock or shortages
Communication & Reporting
- Serve as the primary point of communication between bakery staff and management
- Translate operational instructions, safety protocols, and policy updates for Arabic-speaking team members
- Prepare and submit daily, weekly, and monthly production and compliance reports
- Escalate quality, safety, or personnel issues to management in a timely manner
Qualifications
Required
- 2 years of experience in a commercial bakery, food production, or related environment
- 1 year of supervisory or lead experience in a food service or manufacturing setting
- Fluency in both Arabic and English (spoken and written) — required
- Strong working knowledge of FDA food safety regulations, FSMA, and HACCP principles
- Current ServSafe Food Manager Certification or ability to obtain within 60 days of hire
